Mandarin Almond Salad

Love, love, love this salad! I crave it! I usually make a big batch of the sugared almonds and keep them in an airtight container for future use. Same with the dressing. It's so easy to make it ahead of time and quickly assemble it when entertaining. In a pinch, I've also substituted a few dashes of tabasco instead of crushed red pepper flakes. It's still delish!

Simple Whole Wheat Bread

This recipe is perfection! I have made several previously disappointing attempts at baking bread in the past. And so I was absolutely delighted (and shocked) when my loaves came out BEAUTIFULLY! I halved the recipe and used 2 8X4 inch loaf pans. I used 2 cups bread flour and 2 cups whole wheat flour. I used 1/3 cup of honey. I look forward to using more whole wheat flour next time, as well as adding some extras (flax seeds, sunflower seeds, etc). My kids gobbled up several slices right out of the oven -- drizzled with a bit of honey -- YUM! This one is a definite keeper!

Quick and Almost-Professional Buttercream Icing

This icing is super quick and easy. I doubled the recipe and was able to frost lots of cupcakes for a school event. I did not have any food coloring on hand, but the crisp white icing was the perfect palate for my son decorate with colorful sprinkles. Gradually added a few additional drops of milk to get the right consistency. I didn't bother sifting the sugar. It was buttery good!

Banana Crumb Muffins

These muffins were a BIG hit with the family! Everyone raved about the yummy topping! I doubled the recipe which yielded 16 big, beautiful muffins. I also doubled the recipe for the topping, but had too much left over. I used 1/2c. white sugar and 1/4c. brown sugar. Moist and delicious!

Grilled Pizza

Garlic Asparagus with Lime

Yummiest way to make asparagus! My kids gobbled up several stalks each! I blanched and dried the asparagus first to maintain the beautiful green color. Then it only took a couple of minutes in the skillet. So easy and so good!

Quinoa and Black Beans

Great starter recipe. I added a squeeze of lime and a dab of sour cream to give it a kick. Next time I will throw whatever veggies I have on hand into the onion saute -- diced carrot, zucchini, bell pepper, etc. A bit more cayenne might be a good thing too. Overall, a healthy, hearty, quick, and tasty recipe.

Southwestern Chicken Barley Soup

I was looking for a soup recipe using barley (for its 'super-food' nutrition). I made the recipe as written except that I used 4 cups of chicken broth and reduced the chili powder to make it more kid-friendly. The entire family happily gobbled it up. It's a great way to use up left-overs from a roasted chicken. Love it! Oh, and I added some carrots.

Cheese Soup with Broccoli

I'm not a Velveeta fan and so I tried substituting cheddar. Unfortunately, the consistency was not appealing. I tried mixing cheeses which turned out okay, but the best result was with using all processed cheese. Extra salt is definitely not needed! It's a good recipe that the kids like a lot.

Cajun Style Baked Sweet Potato

I doubled the recipe, sliced into french fry wedges, and turned on the broiler for a few minutes at the end to add a little crispiness. Next time I'll reduce the thyme a bit. Everyone gobbled them up!
