Cream of Mushroom Soup I

Really yummy! I altered the recipe a little because I was actually looking for a homemade cream of mushroom gravy for smothered pork chops. I sautéed the 1/2 onion and 16 ounces of mushrooms with a little EVOO, salt, thyme and pepper. I puréed the mixture in the food processor for no more than 5 seconds to keep the mushrooms slightly chunky. I put the mixture back in the pan with the butter and dusted it with the flour plus a little extra and whisked it together. I added about a cup of whipping cream and about a half a cup of chicken broth until I got the desired consistency. I didn't have the sherry, but that would have been a nice addition. I will use this recipe again, adding more mushrooms and I can just keep adding the liquid at the end to make a nice soup.

Super Squash

Great flavor!! I made a huge pan of this for Thanksgiving and I think every member of the family complimented me on the dish. My husband and I could not stop eating it and he requested more less than a week later. I have a pan in the oven right now but I made it with slightly boiled potatoes this time. I'm positive it will taste as good as it smells.

Better than anything you can find at the store. I make it all the time for my family. Goes great with a pork roast in the crock pot for some bbq pork sandwiches.

Sopapilla Cheesecake Pie

This is the easiest, best recipe ever! The only reason I'm not going to give this 5 stars is because this isn't the best dessert I've ever had. But it is amazing and I could eat it until I got sick. I have 3 kids and don't always have time to make a real cheesecake, or the patience. But the first time I made this, my kids and husband couldn't get enough. Then I made this while on a beach vacation with my family, my 2 sisters, their husbands and all of their kids. They said it was the best thing ever! They've been begging me to make it again. I like using candied pecans chopped up in it. Also good with cherries and ice cream on top. I'm fixing to attempt a pumpkin version.

Awesome Grilled Cheese Sandwiches

I've been making grilled cheese in a cast iron pan for years. But if I make more than 2-3 at a time, it just takes too long. I'm having a grilled cheese play date with friends and I'm so glad I came across this idea. Now I can make grilled cheese for everyone without slaving over the skillet. Yah!

Spaghetti Pie II

I made home made spaghetti the night before and went ahead and cooked a whole package of noodles and a lot of sauce. My sauce recipe is similar to the one shown. So instead of just heating up the left overs, I took this recipe and turned my leftovers into something my two kids and I really liked. I went ahead and used cottage cheese because it just so happened that I had it on hand. I really liked the cottage cheese with it but thought it could use more than 1cup. Next time I think I'll double it. I didn't have mozzarella so used cheddar on top instead. I cooked in a 9x13 glass pan for about a hour and although the egg was cooked thoroughly, the middle didn't hold together. But no biggie. It was still really good and next time my hub tries to explain his co-workers recipe from Boston, I'll be on top of things.

Chicken Fricassee

This recipe was good, but bland. I even altered it after reading the other reviews. I used chicken broth instead of water, added white pepper and a sprinkle of cinnamon; which I believe added some flavor. My husband really liked it and for once didn't go to the spice counter for more seasoning after taking the first bite. My 2 year old liked it as well. But I think next time I'll try the traditional version of Chicken Fricassee.

Apple Cake V

I have to start off saying this is the first time making an apple cake. I followed the directions with a few substitutions as suggested by some reviewers. I used 3 large apples which equaled about 3 1/2 cups. I used half the oil and about 1/2 cup of applesauce. I mixed the oil and eggs well before adding the apples and I opted out on the nuts. The cake batter was dense, not too oily or sweet for me or my kids taste. However, the cake batter did taste a little too much like the baking soda and I know I only used 1 TSP. I forgot to add some cinnamon and other spices to the batter so added it to the topping. I also poked holes in the cake and slowly added all of the topping mixture to give the cake time to absorb it all.
