Shortcut Refried Beans

I forgot to soak my beans so I decided to give this a try because I really didn't want to used canned. Next time, I'll go get canned. I ground up my beans in a Ninja until they were almost powder. My beans came out looking like oatmeal. I added more water and cooked longer to no avail. I finally put the cooked beans back into the food processor for another whirl since they were softer but that didn't help either. These came out gritty. My boyfriend raves about everything I cook even when I don't think it turned out so well. Neither of us finished our servings. It was like eating refried beans mixed with sand. Not a good combo.

Mary's Sugar Cookies

Good recipe for taste. Versatile as well - I can see adding other flavor extracts in place of the almond (coconut, raspberry, etc). Once the dough chills, you do need to let it warm up slightly so that it's pliable to roll. I cut out my cookies then put them into the freezer until just before baking so that they keep their shape better. If you bake them when they're room temperature, they will spread out quite a bit and lose their shape.

Cracked Sugar Cookies I

I second the opinions of so many before me. These sugar cookies are awesome. They're delicate without being crumbly or cakey. I did not spray my pan as there is enough butter in them that they will not stick. I was afraid that if I sprayed the pan, that combined with the butter, would make them run. I rolled them in sugar so that they would have that traditional sugar coating but be sparing as they are very sweet. I also pressed them down slightly with a glass. Perhaps next time I will just sprinkle a little sugar on top rather than rolling the entire cookie. Definitely a keeper!

Mom's Ranger Cookies

I used all of the same ingredients and added Craisins (we like the tartness of them). They were fabulous. I didn't have regular corn flakes but the sugar frosted flakes worked just great as well. Quick and easy to make and quick to bake and cool for a last minute cookie if need be.

Sliders with Homemade Dinner Rolls

LOVE the idea . . . but using that sweet dinner roll recipe was a mistake. The rolls didn't rise and were basically just squares of flat bread. Definitely not sandwich worthy.

Cheeseburger Buns

Made these today. LOVED the dough. It came out soft and pliable (mine was not wet as others have indicated). I made mine in the bread machine then divided it up for the individual rolls. As others have mentioned, I did spice up my beef mixture a little. I doubled the meat mixture to us for another dish. To the tomato sauce, I added a can of tomato paste so that it wasn't too runny but added an extra kick. Also added some Cajun seasoning, Worcestershire, and a dash of liquid smoke. They came out perfect.

Coconut Almond Cookies

These were SO good. I dipped one half in chocolate and sprinkled some of the leftover crushed almonds onto the warm chocolate so they set as the cooled. Brought them to work that night and everyone raved.

I did add chicken to this (I know, I know - not traditional) and diced carrot as this is the way I've always eaten it. I added a little more orzo to make it heartier. A friend tasted it and said that his Greek Grandmother's was just a HAIR better. I took that as quite the compliment.

Banana Cake II

I don't know how anyone can be unhappy with this recipe. I had a little more than a cup of banana only because 2 wasn't quite a cup and 3 was more than a cup. Other than that, followed the recipe to a T (it did take a LITTLE longer in the oven because of the extra banana I assume). It was moist and VERY flavorful. I topped with a cream cheese frosting as suggested and it was perfection. DEFINITELY adding this one to my 'must do again' recipe list.

Cheesy Ham and Hash Brown Casserole

I made this dish this morning for a bunch of hungry airmen and it turned out great. I did substitute one of the cans of potato soup for cheese soup and I added a little more ham to make it meatier. I too thought it tasted a little like scalloped potatoes and wondered what I could do to incorporate more of a breakfast flair (I was thinking of baking without the cheese for 45 mins then adding eggs and cheese at the end), but the boys said not to change a thing. So I'll let the recipe stand on it's own merits. If you do want to spice it up a bit with different flavors, you could add salsa for a Mexican flare. I think I'll offer that on the side next time.

Chicken Tortilla Soup I

I haven't had a single person yet tell me anything negative about this soup. They LOVE it. I have to quadruple the recipe and cook it in a huge stock pot to make enough for everyone. The only changes I've made to it is that I omit the green chilies and the green onions - just a taste preference on my part. I also add a little more beans, hominy, corn and chicken because I like a heartier soup. Definite winner.
