Fruity Curry Chicken Salad

After reading the reviews, I think I was expecting something with a little more punch, but it was definitely the best curry chicken salad recipe I've made. I used only half of the mayo it called for and then used non-fat yogurt for the rest, which may be the reason for some of the lack of flavor. I doubled the curry in the recipe and that's a definite must! Also, the golden raisins and pecans really make it. I do love the fact that it's light and seems healthy!

Egg-White Crepes

Excellent crepes! Simple and seem to be healthy. I used all-purpose flour because it's all I had, but they turned out great. I filled one with fruit and a little light and fit vanilla yogurt and one with bananas and peanut butter to add a little protein to my breakfast. Delicious! I'll make these again for sure!

Slayer's Sweet, Tangy, and Spicy Kabobs

I made this last night for a cookout and it got rave reviews. No leftovers at this event! I left out the maraschino cherries and juice and also the hot sauce because I didn't have them. But, they were awesome! A couple people specifically said the marinade was what made the meal...

Spiced Sweet Roasted Red Pepper Hummus

I just whipped this up and it's awesome! So easy! The tahini I found at my local grocery was salted, so I left out the salt and it's perfect. Just a warning - it's got some kick. I love it, but just hope my guests feel the same way. :)

Baked Sweet Potatoes with Ginger and Honey

These were excellent! I sliced them instead of cubing them to cut down on the bake time. They took about 25 minutes total. Some other reviewers said there was too much ginger, but I thought they were great. It does have a strong ginger flavor, so if you aren't a huge fan,you should probably cut back.

Pumpkin Pancakes

These are pretty good, but after tasting the first few I made some alterations. I added more pumpkin (almost the whole can), more cinnamon and a little nutmeg. Then they were worthy of 4.5 stars. I added pecans to about half of them, and those were worthy of 5 stars! Yum! Great fall breakfast.

Greek Lemon Chicken Soup

Good and thick and creamy. Serving sizes per the recipe would be pretty small, so if you plan to use it as a main dish, you will want to plan on more.

Garlic Chicken with Orzo Noodles

this is a great start that i've made several times. Definitely boil the orzo in chicken stock and load up on veggies! I've added mushrooms, peas and diced tomatoes. Used some italian seasonings and more garlic to spice it up.

Chunky Chicken Noodle Soup

The spices and seasoning in this soup really add great flavor to a classic. I modified this by adding some frozen peas and corn and used whole wheat egg noodles to make it a little healthier. I did use more noodles than it called for because I'm not a fan of brothy soups. I accidentally grabbed the wrong bottle out of my cabinet and added a little allspice before I realized it, but it stilled turned out great. Maybe a stellar secret ingredient?

World's Best Lasagna

I don't know if I'd call it "world's best" but it is pretty darn good! Plenty of sauce. I agree with other reviewers that the sauce would be great as a sauce with any pasta. Yum! The sauce makes this a time consuming project, but it's completely worth it!

Rosemary Roasted Turkey

This was the best Turkey I've ever had. It was my first time making a Turkey for Thanksgiving and I got a ton of compliments on it. I did a brine first. Rubbing the mixture under the skin was gross, but I tried not to think about it. Turned out moist and wonderful!

D's Famous Salsa

This was one of the easiest homemade salsas I've ever made. I drained the cans of tomatoes and used 2 fresh jalapenos instead of the chiles. I also used a little more onion than it called for. Just pulsed it 3 or 4 times and it was a perfect consitency! It definitely tastes like restaurant salsa (not sure if that is a good or bad thing) but I got a ton of complements on it when I served it at my superbowl party.

Quinoa with Carrots and Raisins

This is pretty good, but I would call it more sweet than spicy. If I make it again, I would cut down on the raisins (maybe 3/4 cup) and add more walnuts. They make it delicious! I added all the pumpkin pie spice, despite other reviews, and I wouldn't want to cut down on that at all.

Balsamic-Glazed Salmon Fillets

The glaze is very tasty. I didn't feel that it was too sweet like some others said, but it's probably just a personal preference thing. Very good and VERY easy with ingredients I had on hand. I'm sure I'll make it again some time.

Quinoa and Black Beans

This was great. I used 1 can of diced tomatoes w/ chilis in place of 1 can of black beans. I think it would be way too many beans otherwise. If you are a fan of Chipotle's burrito bowls, try this quinoa topped with fajita style green peppers, onions and chicken, along with some salsa and sour cream. It makes an excellent meal!

Chocolate Trifle

Great and super easy. The only change I made was to add Heath bits to every layer and top. It's really rich. I may try this again using sugar free pudding, low fat condensed milk and lite cool whip to make it a little less sinful to eat!

Plum Blueberry Upside Down Cake

I added about a 1/4 tsp of cinnamon like other reviewers mentioned. I baked it for about 55 min and I still don't think the center was quite done. It tasted delicious, but didn't look as good as it tasted. If I make it again, I will put the plums over the whole top and then just put the blueberries underneath that. This is excellent served warm with ice cream!
