Made this for dinner on Tuesday night for my family, and everyone enjoyed it, including my 2-year old. I made it exactly as described, and we thought it was tasty, simple, and refreshing. Quinoa tastes very good cooked in chicken broth, but the liquid created from cooking the tomatoes and melting the feta really adds something special to the dish. The veggie prep does task some time, so for a weeknight, I'd try to prep the veggies the night before to save time, but I will definitely be making it again.
As far as variations go, I'd like to try it with a light fish next time around.
