Yummy Honey Chicken Kabobs

Reviewed: Sep. 5, 2011
I tried this recipe tonight; I doubled the sauce, and we did half the chicken/veggies "as is" in the recipe and for the other half of chicken/veggies, we used the sauce as a glaze (did not marinate this half), just to compare. I served the chicken and veggies over rice. We didn't think that marinating everything in the sauce did very much when compared to the glaze. The flavor added by the glaze in the last couple of minutes of cooking did a lot. My almost-3 year old son liked his chicken (both cooking methods -- he didn't discriminate!). We had some leftover sauce and my husband just kept pouring it on his leftover rice, and said how much he liked it just as a sauce. I will probably not use this recipe as written again, but I will definitely be keeping the sauce recipe to have on hand for stir-frys and rice, and I also plan to try oven-baking the chicken (half breasts) in the sauce another time. In my opinion, this recipe is definitely worth a shot, and worth experimenting with for your tastes.

Chicken with Quinoa and Veggies

Reviewed: Mar. 3, 2011
Made this for dinner on Tuesday night for my family, and everyone enjoyed it, including my 2-year old. I made it exactly as described, and we thought it was tasty, simple, and refreshing. Quinoa tastes very good cooked in chicken broth, but the liquid created from cooking the tomatoes and melting the feta really adds something special to the dish. The veggie prep does task some time, so for a weeknight, I'd try to prep the veggies the night before to save time, but I will definitely be making it again. As far as variations go, I'd like to try it with a light fish next time around.

Easy to make and everyone enjoyed it. I liked the idea of it very much and plan to try it with different flavors for the stuffing.

Italian Sausage Lasagna

Reviewed: Dec. 2, 2010
Not great, not bad. It didn't taste as stellar as I thought it would after reading the other reviews. It tasted like a regular sausage lasagna.

Scrambled Egg Muffins

Reviewed: Jul. 19, 2010
Great tasting a fun! I can't believe I haven't thought of something like this before. I made these for a quick brunch one day after my husband's soccer match and they were delicious, easy and so flexible -- they're a great conveyance for whatever you have on hand. These scrambled egg muffins were such a wonderful new idea for me. Thank you!

Smothered Bacon Chicken

Reviewed: Apr. 9, 2010
Very tasty! I made this per the instructions with one exception: I did par-cook the bacon in the microwave before wrapping it around the chicken. It was a hit with the whole family. The only thing I would say is that the next time around I will use "light" ingredients all around. This dish is pretty heavy, so you can probably go with "light" for the creamy ingredients. Will definitely be making it again.

Pepperoni Drop Biscuits

Reviewed: Feb. 7, 2010
These are incredibly easy and very tasty. They're nothing that will blow your socks off, but very tasty and very addictive. They make a great snack for parties. The next time I do them, I will probably change the size of the biscuit so it is a little bit smaller and more "appetizer" sized.

Frozen Blueberry Muffins

Reviewed: Jan. 23, 2010
Disappointed ... the muffins came out extremely dense; I didn't enjoy the texture. I felt they were a bit bland and lacking in flavor as well. I liked being able to use frozen blueberries directly, but I will try to incorporate frozen berries into a different recipe. I won't be using this one again.

Turkey Brine

Reviewed: Dec. 18, 2009
The brine was okay, but nothing that left us very impressed. It really didn't do as much for the moistness of our turkey as I thought it would, and my turkey came out about as moist as it has in the past when I haven't used any brine. The gravy was very tasty, though, and as other reviewers said, the drippings were key for a wonderful gravy! I may try it again, if for nothing else than the tasty gravy that results.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Dec. 18, 2009
Simple, easy, short ingredient list and very tasty! I will definitely make this again "as is" and will also try a few variations when we want a different texture (like some cream cheese in it, possibly some jalapenos, etc.). Thanks for sharing!

Cranberry Sauce I

Reviewed: Dec. 2, 2009
Tried this recipe for Thanksgiving and really enjoyed it. I did add a couple of pinches of cinnamon and nutmeg, but other than that, did it the same. The only complaint my husband had was that the cranberry skins seemed kind of tough. From what I can tell, the skins are just part of homemade cranberry sauce. Perhaps cooking it just a big longer at a lower heat might help tenderize the skins? Anyway, we enjoyed it as did our guests.

Satay Chicken Pizza

Reviewed: Nov. 24, 2009
I really liked the idea of this pizza; however, I think the choice of peanut sauce probably makes it or breaks it. We used Thai Kitchen brand peanut sauce, and the sauce was so oily that it was tough to spread on the crust and have it actually stick to the crust. Additionally, the peanut flavor overpowered the chicken, green onions and carrots that we put on top. We probably won't make this again as is, but might attempt our own version later.

Butternut Squash Bake

Reviewed: Nov. 12, 2009
Absolutely wonderful!!! This almost tastes like a stuffing due to the bread crumbs and the thyme. We loved it just as it is, and will be making it again. As some other reviewers said, you could add chicken and turn it into a meal.

These were tasty. I'm not the biggest fan of pumpkins seeds, but these were nice and salty, with good flavor.

Cream Cheese Jalapeno Hamburgers

Reviewed: Sep. 5, 2009
This recipe provided a great technique for me to learn (stuffing the burgers), but it needed more. Don't get me wrong, the jalapenos were great, but next time we try these, we'll do a cheddar and cream cheese mixture, along with jalapenos, scallions and possibly bacon. One thing worth noting is that the burger filling is PIPING hot when they come off the grill, so you need to make sure to allow ample time to cool so guests don't burn their tongues on the filling.

Easy Slow Cooker French Dip

Reviewed: Aug. 24, 2009
Definitely a keeper! I added a dash of worchestshire sauce, along with some steak seasoning. Great flavor, and I will be making this again. It makes a lot, so next time I'll probably do it when we have company. It's pretty filling, especially when you have it on a hearty bread, so in our house, we got a lot of mileage out of it.

French Bread

Reviewed: Aug. 22, 2009
My husband said "Better than the bakery!" I did most of the work in the mixer bowl (didn't incorporate flour with the wooden spoon), and I only used 5 cups of flour. Worked great, and we'll definitely be making this again!

Zucchini and Potato Bake

Reviewed: Aug. 16, 2009
Tasty! A good recipe for excellently cooked veggies. I added an onion as well, and a few extra breadcrumbs. I would definitely make this again; however, I would add more seasoning. While the veggies are cooked very well, my family prefers a little more seasoning.

Spicy Italian Pork Cutlets

Reviewed: Aug. 15, 2009
Overall I think this one was decent, but not something I'd crave. It was interesting because I really enjoyed making it; however, I think that the pork cutlets at that thickness may be too thin. Mine were a little dry. I would make it again, but I would use thicker cuts of meat. The sauce was flavorful and for us was a different taste with pork.

Zucchini and Onion Pancake

Reviewed: Aug. 12, 2009
Made this recipe two nights ago for the hubby. I did drain the zucchini and onion in a collander as well as damped it with paper towels. We thought that this was a good base recipe to start out with; however, I would not make it the same way again. I would add a bit to it: a little egg and a little flour (but not enough to qualify as a full-blown pancake), parmesan cheese, and some sort of tomato-based relish for the top. Again, while we enjoyed it well enough the other night, I would use this to branch off for something more tailored to my family's liking. Consider this a good foundation.
