Yummy Honey Chicken Kabobs
I tried this recipe tonight; I doubled the sauce, and we did half the chicken/veggies "as is" in the recipe and for the other half of chicken/veggies, we used the sauce as a glaze (did not marinate this half), just to compare. I served the chicken and veggies over rice. We didn't think that marinating everything in the sauce did very much when compared to the glaze. The flavor added by the glaze in the last couple of minutes of cooking did a lot. My almost-3 year old son liked his chicken (both cooking methods -- he didn't discriminate!). We had some leftover sauce and my husband just kept pouring it on his leftover rice, and said how much he liked it just as a sauce. I will probably not use this recipe as written again, but I will definitely be keeping the sauce recipe to have on hand for stir-frys and rice, and I also plan to try oven-baking the chicken (half breasts) in the sauce another time. In my opinion, this recipe is definitely worth a shot, and worth experimenting with for your tastes.

Chicken with Quinoa and Veggies
Made this for dinner on Tuesday night for my family, and everyone enjoyed it, including my 2-year old. I made it exactly as described, and we thought it was tasty, simple, and refreshing. Quinoa tastes very good cooked in chicken broth, but the liquid created from cooking the tomatoes and melting the feta really adds something special to the dish. The veggie prep does task some time, so for a weeknight, I'd try to prep the veggies the night before to save time, but I will definitely be making it again. As far as variations go, I'd like to try it with a light fish next time around.

Broccoli Chicken Roli
Easy to make and everyone enjoyed it. I liked the idea of it very much and plan to try it with different flavors for the stuffing.
