Ultimate Irresistible Granola

This is a great recipe - my partner makes it all the time, he doesn't always use the same ingredients, subs one thing for another, but it always comes out fantastic!

Good chicken stock made this soup awesome, instead of cream I used milk, it was soupier but tasted fantastic. I also did not use cornstarch and I sauteed the leek with onion and garlic in olive oil before adding the chicken stock and potatoes. Turned out fantastic, thank you!

Maple-Drizzled Apple Muffins

These muffins are amazing. I've learned from making various apple muffin recipes to always up the spices, so I added another 1/2tsp cinnamon, 1/2 tsp cloves and 1/2 tsp nutmeg also. I did not add the frosting as I'm hoping to have these as a breakfast treat. I used walnuts in place of pecans and added raisins. Very tasty, especially warm.

Banana-Zucchini Bread

Woah good Zucchini Banana bread. I made a few adjustments - increased the zucchini to 2 cups, used 3 bananas, used 1 1/3 cup packed brown sugar and no white sugar, and I used butter instead of oil. I also didn't have cranberries so I used raisins, and put in some chocolate chips. Yumm!! It came out moist and a little dense, but I think that is my fault and I will definitely make this again!

Vegetarian Moussaka

This recipe took a little too long, and later I learned that I could have baked the zucchini, potato and eggplant slices. Pan-fried slices aside this was one of the most amazing meals I've had in a while, woah amazing, we will definitely be having this again sometime soon - with baked instead of pan-fried veggies! Thanks you for sharing this recipe!

Butter Flaky Pie Crust

Fantastic dough recipe, I've had a hard time finding one without shortening; an ingredient that doesn't frequent our household. This one does the trick! I added some sugar last time for a dessert pie. I will definitely use this recipe again and again!

Rich and Creamy Tomato Basil Soup

Amazing - I used only tomatoes from my garden, pureed 2 cups in the food processor and diced another 2 cups. I let the tomatoes simmer slightly for a few hours, which made an enormous impact on flavor! I used atleast twice the basil because our plant is enormous and won't last forever. I also used about half the butter, since we didn't have enough. My partner was sick, thus why I made the soup - his favorite - no need for the canned stuff anymore! This recipe was simple and fantastic!

Perfect Lemon Curd

I made this custard for a birthday gift for someone who considers themselves a lemon custard connoiseur - it was very well recieved. The four stars is due to methods - I used a double boiler to heat the lemon zest and juice first, wisked the eggs with the sugar seperately and temepered the eggs before adding them to the double boiler and getting it thick that way. I made the Butter Flaky Pie Crust and served it with fresh blackberries on top. FANTASTIC!! Thanks!

Alfredo Sauce

I made some edits due to what I had on hand - I doubled the recipe, sauteed onion in half the butter, added the other half of the butter and some fresh crab!!, I didn't have quite enough heavy cream so I subbed in whole milk, otherwise I followed the recipe. It was amazing! My partner doesn't like Alfredo sauce with cream cheese and he really enjoyed this sauce! We will be making this again.

Soft Zucchini Spice Cookies

Fantastic - cakelike, but that's exactly what I was looking for - I cut the sugar in half and added chocolate chips, they weren't runny at all (I didn't squeeze out the zucchini) & my household is gobbling them up!

Zucchini Brownies

These brownies are amazing, the zucchini is easily disguised by the fantastic chocolate flavor. I was surprised by the dry consistency before putting these into the oven and was pleasantly surprised to pull moist brownies out of the oven! The frosting is very tasty & a nice compliment to these brownies.
