I am a Wife, Mom & Gramma. I have been married for over 34 yrs. I have 3 grown boys, 2 of whom are married and one in university, still living at home. My oldest son has 2 children, whom I adore! I am very involved in the music dept. of our evangelical church. I play both piano & organ and sing solos, as well as alto in a trio. My favourite things to do are cook, bake, and play my piano. I am also a song writer.

My favorite family cooking traditions
I come from a family of wonderful cooks, and we all love to eat! My maternal grandmother was a great cook - and the tradition has been passed down to my Mom and my sister & I.
My cooking triumphs
My family tell me I make the best pizza anywhere. They also rave about my chicken enchiladas. I kind of developed the recipe myself. I do that with a lot of things! I am known for my baking skills. I love to bake cookies and muffins more than anything else. My grandson has an egg allergy, so I have come up with a few very good recipes that he loves. Especially my egg-free brownies, and chocolate cookies (as well as chocolate chip).
My cooking tragedies
One thing I am not good at is cake decorating! I can make a great tasting cake (egg-free, as well), but don't ask me to decorate it!

Freezer Caramel Drizzle Pie
I made this in a 9" X 13" pan, using 2 cups of gluten free graham cracker crumbs (which I made myself), 1/4 cup of melted butter & 2 Tbsp. of sugar. I used a 1 litre container of cool whip, as we don't have 16 oz. size in Canada. Over the first layer of the cream cheese mixture, I sprinkled 2 crushed up score bars and mini chocolate chips, drizzling caramel ice cream topping over the top. Repeated the layers. I made this for a family gathering this weekend, but had to try a tiny piece before they all get here. AMAZING!!!!!

MMMMM... Brownies
I didn't care for these at all! Not sure why - but the recipe doesn't have near as much butter as you usually find in a brownie recipe. I should have stuck to my tried & true brownie recipe.

Caramel Shortbread Squares
Very good recipe. Just a couple of tips to help make them a little easier. Definitely line the pan with foil for easy cutting. Also - there is no way you can spread the chocolate without adding something. I had to add 4 Tbsp. butter to get it thin enough to spread. I used 1 cup of semi-sweet choc. chips and 1/4 cup milk choc. chips.
