Arthritis has changed the way I eat. I went on an anti-inflammatory diet several years ago as a last ditch attempt to control my arthritis. Modifying the diet helped a lot. Then I went on the Paleo diet. All of my pain has stopped :)
My favorite things to cook
Meat and vegetables are the majority of my diet. I also like to work with making grain free, low sugar desserts and breads.
My favorite family cooking traditions
Scandinavian specialties such as lefse, rosettes, and lox all have a special place in my heart. Too bad only the lox works on the diet.
My cooking triumphs
I have been on an anti-inflammatory diet for five years and have eliminated my need for painkillers and NSAIDS. Learning a new way to cook on a daily basis and consistently applying it has been my greatest triumph in the kitchen.
My cooking tragedies
Accidentally melting a rubber spatula into a batch of fudge when I was eight.

Slow Cooker Roast Beef
I used a 3 lb. chuck roast (a rather tough cut of meat) for this recipe. I used gluten free low sodium soy sauce and followed the rest of the recipe. I slow cooked it for 8 hours. The meat was so tender it practically fell off the bone!

Slow Cooker Chicken and Dumplings
I tried adding spices per other reviewers suggestions. This dish still tastes like it came out of a high school cafeteria.

Jalapeno-Blue Cheese Burgers
Excellent burgers. We made them on the George Foreman grill. If you like spicy foods, you might want to add some hotter peppers in with the jalapenos
