White Chocolate Macadamia Cranberry Dreams

I gave an assortment of homemade cookies to my daughter and her family for Christmas. These cookies rated highest and received the most compliments among the varieties I made. They were easy to make, and yummy to eat. I will certainly be making them again. P.S. no substitutes, I stuck to the recipe. Also I premeasured everything for the recipes ahead of time, put them in storage containers, and labelled them according to the recipe. I taped the recipes to my upper kitchen cupboard doors, and set the ingreds. on the counter below them, respectively. The day I baked, everything was ready to go. Just mix and bake! Wet ingreds. were premeasured and labelled for refrigeration until needed as well.

Slow Cooker Apple Crisp

Wouldn't have believed you could make apple crisp in a crock pot, but this recipe proves it to be true. My hints/tips: I sliced a 3 lb. of Ida Red apples, put in a large ziploc bag along with 1/2 cup br. sugar, 1/2 tsp. cinnamon, 1/4 tsp. nutmeg and 1 tblsp. cornstarch. Close bag and shake to coat apples well. I took contents of the bag and put in an even layer in crock pot. I made my own topping using 1 1/4 cup rolled oats(not instant), 3/4 cup br. sugar, 1/2 tsp. cinnamon & 1/4 tsp nutmeg. Cut in 1/2 cup of room temp. butter and knead with fingers until crumbly. Spread evenly over apples and baked according to instructions. Leaving the lid off really does make the "crisp" yummy! Served it with french vanilla ice cream. Happy for seconds!

Slow Cooker Cranberry Pork

Served it to friends and they loved it. I, along with other reviewers, seasoned roast with olive oil, crushed garlic, salt and pepper overnight in a ziploc bag. I wouldn't hesitate to make it again. Sliced beautifully!

Slow Cooker BBQ Pork Chops

Originally, I was going to BBQ the pork chops until I found this recipe. So easy and the results were out of this world. I used President's Choice Maple, Apple and Beer Sauce, along with some onions under the chops and on top before pouring the sauce over. The meat was so tender it fell off the bone. Definitely 5 stars!

Rhubarb Strawberry Crunch

Homemade Vanilla Pudding

This recipe was so easy and only calls for a few basic items. I started with a small purchased pound cake, sliced, then cubed it into a large bowl. To this I added some fresh pineapple tidbits and a handful of coconut. I used the juice from the pineapple (approx. 1/3 cup) and drizzled over contents in bowl. When the pudding was prepared, I let it cool for about 10 minutes. In the meantime, I gently mixed above ingreds. in the bowl. Finally when pudding was lukewarm, I poured it over the cake/pineapple mixture and refrigerated for a half hour. Served it with whipped cream. It was so easy to prepare and versatile. Its a great way to use up berries or fruit and inexpensive but delicious. Better than a trip to the donut shop!
