Roasted Asparagus and Mushrooms

I add pieces (tenders or chunks) of cooked chicken to this and it becomes a one dish meal (mix everything together right on the pan). Fantastic & healthy & EASY. (5 stars even without additions) I use 'baby bella' mushrooms. I also will just set the sprigs of rosemary in the pan- you get some of the favor without the tough pieces of rosemary that turn some people off (like my kids...) I've cooked asparagus like this for years and love the addition of mushrooms & rosemary.

Key Lime Pie VII

this was a big hit! No changes. I made in cupcake tins and it made about 14 individual 'pies'. I topped with light whipping cream and a key lime sliver- looked fabulous too!

Ancho-Chipotle Salsa

used 5 fresh roma (plum) tomatoes. used about 1/2 tsp crushed red pepper instead of the ancho (what I had on hand). I did not seed the chiptole chile and added about 1/2 T of the adobe sauce from the can of peppers. I also put in about 1/2 T chili powder. I used a food processor. I'm sure this would have been 5 stars without the changes, but it definitely was 5 stars with the changes. Update: I made 4 different salsas and had the husband try each. This was the winner (with the above changes) and the one I will be canning!

Caramel Snack Mix

I didn't have a roasting pan, so I put it in 2 large cake pans. I used honey roasted chex (generic brand), which has rice & corn cereal in it. I made exactly as written and at one hour it was slightly burnt. I wish I would have taken it out at 45 minutes. Still disappeared fast, even though I warned people it was burnt!

Cajun Seafood Pasta

I used 1/2 the white pepper and no red pepper flakes and it had enough kick for me. I used all dry herbs (instead of fresh), so I reduced to about 3/4 T each. I used the seafood, but I also added chicken for the non-seafood lovers. (I added cajun seasoning to the chicken and grilled it). it was excellent with chicken as well.

Baked Ziti IV

I used 1.5 lbs of ground italian sausage (it was easier than using 1/2 a package of each). I also didn't have rosemary so I used the same amount of an italian seasoning blend. This truely is the BEST! I've had this recipe sitting in my book for a long time and finally made it. It was awesome! I'd give this more stars if I could!

I really liked this, but it didn't go over as well as I thought it would. The boyfriend said the beans were too dominant. I liked it and will make it again, maybe with a different crowd.

Easy Slow Cooker Chicken

I turned it on low and cooked it while at work (about 8-9 hours) and it was still plenty moist. A little thick, but not bad. I sprayed the sides of the crock pot to keep it from burning/sticking to the side. this needs more flavor. it's nice and easy, but next time I will add dry onion soup mix.

Restaurant-Quality Maple Oatmeal Scones

I used dried blueberries instead of cherries and these turned out fabulous. Everyone kept asking me where I bought them. I had never made scones before, so I was a little nervous, but they turned out great.

Green Bean Bundles II

These are great. I made these along with the Garlic Mashed Potatoes Secret Recipe and the Savory Garlic Marinated Steaks (both on this site) for Christmas and it all looked and tasted fabulous together. This unique twist on green beans got everyone talking.

Chicken Enchiladas II

This recipe is one of the main reasons I continue to use this website as my cookbook. I first made this back when (years ago!) there were only about a couple of reviews. But, this continues to be one of my favorites. It's great for potlucks and dinner parties. It doesn't have a lot of the ingredients that people pick out, which I love. This is my boyfriends favorite- he says some nights he dreams of them. = ) Enjoy! No changes needed!

Penne with Spicy Vodka Tomato Cream Sauce

I increased vodka to 1/2 cup, like others suggested. For the sausage I bought Italian sausage brats (Johnsonville). This was twice as much meat as called for in the recipe. I'm glad I used this much. I thought this was too much pasta for this sauce. I would only use 3/4 lb of pasta next time (or increase the amount of sauce) Also- this could easily feed 6-8 people (not 4 as suggested) Good overall, EASY to make, but not overly extraordinary.
