Spinach Quiche
Love this recipe. I have tried to make this somewhat more healthier for us. The few modifications I do is I like to brown a couple of sweet turkey sausage links then remove those onto a plate with a paper towel to get the extra grease out then add it back in later with all of the other ingredients. I then use the same pan for the onions and garlic but I cut the butter down to 2 Tbs. That is plenty. I use about 3/4 of a package of fresh mushrooms diced (even though I don't like mushrooms at all, there is so much flavor in this quiche that they don't bother me). Instead of 8 oz of cheddar, I halve that and then do about 4 oz of smoked gruyere. That is such a great cheese in quiche. I also use Egg Beaters instead of eggs and FF milk. I never use a crust and it turns out fantastic every time. This last time I actually put this in a small casserole dish and it worked out even better becuase usually there is too much to fit into my quiche pan.

Low-Fat Blueberry Bran Muffins
These muffins were fantastic! Based off of a couple of reviews I did tweak it just a little and I threw in some of my own additions. I used All Bran Buds and I soaked them in 3/4 c milk and 1/4 c orange juice. I reduced the brown sugar to 1/3 c because I had sweetened applesauce. I used 1 1/2 t baking soda and 1/2 t baking powder. I added 1/2 t cinnamon and 1/2 t fresh orange zest. These were not dry, not soggy, just perfectly moist and delicious. Nor were they too dense either. My husband LOVED these. Great to make ahead and have something quick and healthy in the morning during the week.

Roasted Garlic Zucchini and Tomatoes
Yummy. I halved the recipe and did a few substitutions. I used one zucchini, about 10 grape tomatoes halved, omitted the onions and 3 teaspoons of chopped garlic from the jar. We love garlic. I added the parmesan cheese before baking and mixed that in as well. And for an extra kick I added about a half tablespoon of balsamic vinegar. I think that really made it. I didn't have fresh basil so I used a couple of the frozen basil cubes from Trader Joe's and threw them in before I put this in the oven and mixed it all together. I baked at 450 for 10 minutes and it came out perfect.
