After learning my 4 year old is allergic to egg among other things, we weren't sure what he was going to eat. I used this recipe and added 1/2 cup semi-sweet chocolate chips and it turned out perfect! He was so excited to know he was still able to have some sweets. Thank you!

Chicken Breasts Stuffed with Perfection

My family loved this. I used frozen spinich instead of fresh. I also didn't use the freezer technique. I just stuffed and cooked. I also did as another review suggested and ate the left over filling as a dip with Fritos. I will do that at parties but I will omit the tomatoe. It was good but a little too tangy for a dip.

Tortillas I

I used this recipe for my pastallio shell. I haven't been able to find one that had the right consistancy but this one worked. I will try it as a tortilla next time. I followed the directions as listed except I let it set a bit longer than instructed.

Buffalo Style Chicken Pizza

I tried other recipes for this but haven't found anything that pleased my husband. This was much easier and he was happy. I let the chicken set in the buffalo sauce for about an hour before using. YUMMY!

Spanish Rice II

This was my first attempt at spanish rice and was pleased. I used green olive in place of the green pepper and added frozen corn. For the tomatoe sauce, I blended onion, green pepper, It. Seasoning and tomatoe. I also added a tiny bit of cayenne pepper and 1 pkg of Sazon Goya. EXCELLENT.

Beef and Bean Chimichangas

My family loved these. I used chicken instead of beef. Next time I will add black beans and diced red peppers. We ate it with lettuce, tomatoe and sour cream. It was excellent!

Stroganoff Sandwich

Sour Cream Enchiladas

Very good. I had some friends over the other night and I made this. Was a bit nervous having never used the recipe before but it was a huge hit! The kids LOVED it. I think next time I will add 1 more can of soup and more sour cream. We like it a little creamier.
