Summer Squash Puffs

In lieu of cornmeal mix, I used 2/3 c. cornmeal, 2 tbsp of sugar, 1 tsp. of baking powder (in addition to the 2 tsp.), 1/4 tsp salt (in addition). Instead of regular flour, I used whole wheat flour. I added 1/2 tsp of garlic powder, too. This was so delicious!

Chocolate Zucchini Bread I

I didn't melt the 2 oz of chocolate and mix it in. Otherwise I followed as is. The bread stuck to the pan but is delicious!

Roasted Sweet Potatoes and Vegetables With Thyme and Maple Syrup

This was really good. I didn't have fresh thyme on hand, so I sprinkled dried thyme on it and it was still great! Also, I increased the carrot and parsnip to sweet potato ratio, as I had more of them on hand, any ratio would work - whatever your personal preferences are.

Moist Carrot Cake

Like others, I lowered the oil and substituted applesauce for part (1/2 c. oil and 1/2 applesauce). I skipped the coconut. With those alterations, 5 stars!

Lemon Zucchini Bread

This was amazing! I followed suggestions that others made - don't beat the zucchini with the wet ingredients. Just add it to that mixture, then stir in the flour mixture till blended. I used a full tablespoon of lemon zest, and added 1/2 tsp. of vanilla.

Steff's Shepherd Pie

Used a whole onion and a few garlic cloves, which I sautéed, then added the cooked meat (used ground turkey). I put a layer of mashed potatoes on the bottom and on top (at least 4 c.) Yum!

I also substituted 1/2 c. of pumpkin butter for 1/2 of the oil and added the crumble someone below suggested. It would have been great without the substitutions, but was more my style with the changes. Yum!

I followed the suggestions made by "Gwen on the West coast" and I think this made them even better. I experimented with freezing them. When they thawed, they were slightly drier than the ones that weren't frozen, but they held up well!

Steamed Fish with Ginger

This was great. Instead of pouring heated oil over the fish at the end, I mixed it with the soy sauce warmed it (not to the point that it smoked) and poured it on once the fish was cooked. I hate it when oil splatters and this avoided that mess.
