Zucchini Brownies

I loved these. Used 1 large zucchini (about 300 grams) and added some semi-sweet chocolate chips. It was moist and delicious! Definitely more like a decadent chocolate cake than a brownie, though. My brownie loving friend didn't like that, but I actually liked it a lot.

Cottage Cheese Chicken Enchiladas

My BF made this for me tonight and it was amazing! I've never enjoyed enchiladas until I tried these. We are also trying to eat healthy, so made lots of less-bad-for-you substitutions which worked out great in our opinion. We used fat free cottage cheese, light sour cream, 2% Mexican cheese blend, and eight low-carb 6-inch tortillas. We poured enough enchilada sauce to cover the bottom of 9x13 inch pan, then rolled up hefty amounts of chicken and cheese mixture in each tortilla, seam side down. Covered all the tortillas with a lotta enchilada sauce to make sure it was moist, and topped with the whole bag of Mexican blend cheese and sliced black olives. A very filling meal with plenty of leftovers! Maybe we'll have those with some chopped green onion on top :) Thank you for a great, healthy, satisfying recipe!

Pizza Dough II

Followed the instructions, except added about 1.5 tsp of garlic herb powder with the olive oil and flour addition, and precooked @ 425 about 7 minutes. I left the dough to rise in a large metal bowl (covered with wet paper towels), floating in a sink half-filled with luke warm water for 1 hr. My roommate LOVED the crust. It was good, but not spectacular.

Chicken Tortilla Soup V

This was a really good, filling recipe. I didn't have any cumin, ground chili pepper, or lemon juice on hand, but it didn't seem to lack them. I think I'll take the other reviewers' advice and try shredding the chicken instead of just leaving it cubed. I also added a lot more garlic (half a clove) and sauteed it with the chicken for about 1 minute before adding the broth.

Sesame Broccoli Salad

I made this three times, each time being a bit different. Overall, this was just a 3/5 because as simple as it is, that's how simple it tastes. I could distinctly taste the vinegar and sesame oil, and it just overpowered the dish. My third attempt, I did everything as stated, but also added some red pepper paste, hint of worcestershire, 1/2 tsp. of crushed garlic, some salt and pepper, and tsp. of oyster sauce. Now it's chilling in the fridge. It's more aromatically pleasing, among other things. Overall, a simple recipe.

Cream Puffs

"center SHOULD be dry." I agree, they SHOULD. No matter how I baked these, they were still all mushy inside, whereas they APPEARED to be perfect. They did puff and have a nice, golden brown texture on top. After the HUGE disappointment, I didn't even bother to make the filling.. I'll never even bother to make these again.

Good Old Fashioned Pancakes

Considering the simplicity (on-hand ingredients and prep.) I guess it's a good recipe. But although the baking soda helped the pancakes get their light and fluffy texture, it was too much to the point where it could be tasted. (Cooking time is about 1 min the first side, then about 30 seconds the other for about 1/4 in. pancake.) I guess I'll be using this until I find a better recipe.

Antipasto Pasta Salad

This is a GREAT recipe! I never even knew what antipasto was before! I don't put in pepperoni or salami, seeing as how they're annoying to cut and the bits of chicken make up for their absence. I used to always omit the oregano because I didn't have it on hand, but my sister went shopping and got it so I put it in and it kind of ruined it... it just made it smell too herb-y and tasted bitter. I'll definitely make it again, just never again with the oregano!

Kentucky Butter Cake

My cake didn't exactly come out "moist and buttery." It came out more hard and dry, like a biscuit. I baked it in a cake pan and also in a mini muffin tray and I spooned the sauce over the muffins. Although the results weren't as I imagined, they were still yummy. But this recipe sure does require a lot of sugar!

Simple White Cake

I don't know why but these were awful. It was easy to make and looked great when they came out, but they were hard, dry, plain, and had a bad texture. Sorry, but I'll NEVER make these again.

these cookies were great. i wish i hadn't split the recipe in half cause they were eaten quickly. i put in chocolate pudding mix. i'll make these again when i have the time.
