Catherine's Spicy Chicken Soup

This was terrific. I made the following changes. Skipped the whole tomatoes, and topped the soup with green onion, avacado, diced tomatos and crushed tortilla chips. Yum!

Banana Sour Cream Bread

I have tried about a dozen or so banana bread recipes and this is the best! I half the recipe, add an additional banana, and make as directed. I really think the sour cream makes this bread stand out. I really like the sugar/cinnamon mixture on the pan too.

Jamie's Cranberry Spinach Salad

As good as everyone says. I made it as written. It went over well for Thanksgiving and totally seemed to work as a fall salad. I made it again but added a chicken breast, a bit of gorgonzoloa cheese, and a few pine nuts and had it for lunch. Great!

Phenomenal Chicken and Pasta in Creamy Pesto Sauce

This recipe was good, with plenty of leftovers for lunch. I did make changes though. I used different pesto since I had some leftover, the recipe is on this website, Vegan Sun-dried tomato Pesto. Additionally I used fat-free half and half instead of the heavy cream,and added some fresh spinach at the end. It made this recipe far less fattening and I thought it still had a rich creamy taste. Recipe was great with some garlic bread. Will be making again.

Vegan Sun-Dried Tomato Pesto

I really liked this pesto! The addition of the sundried tomatoes gave it a real boost in flavor. I had tried another pesto recipe that called for parmesan cheese and I found it a bit greasy. This one was perfect. I did decrease the garlic to one big clove and that was enough for me.

Hummus III

This hummus turned out great! I reduced the tahini to 1/4 cup and also roasted both a red bell pepper and the garlic cloves in the oven at 450 for 30 minutes, turning once halfway through. I put the pepper in a plastic ziplock while it cooled and then pulled the outer blackened skin off. I then put about half the pepper and the garlic into the blender with the other ingredients. The roasted garlic is much mellower this way than raw and the pepper adds a nice flavor. I also reserved the liquid from the beans and used that to thin the hummus.

I was very happy with this recipe! I added some sausage and used fresh herbs, but otherwise followed the directions. A great way to use some of my garden tomatoes!

Pesto Pasta with Chicken

I thought this was a pretty good recipe as written, I used my own pesto too so perhaps that was it, but I found it a bit bland. I did add some freshly grated parm to add some extra flavor, but I likely won't make again.

Roasted Brussels Sprouts

The best way I have to make brussel sprouts. The high heat seems to mellow the bitterness that I normally taste when I make these. Don't worry that they turn dark. I prepare asperagus the same way.

Ginger Glazed Mahi Mahi

I thought this recipe was just okay. I thought the sauce was a bit much for the mahi mahi and kind of overpowered it. I did like the ease of the prep but likely would not make it again.

Pumpkin Apple Streusel Muffins

I followed the recipe exactly except that I added 1/2 cup additional pumpkin and also added 1/4 cup ground flax seed. They were moist and I though perfectly seasoned.

World's Best Lasagna

This really is a good lasagna recipe. It is a nice blend of flavors and is thick which I like. I have prepared the sauce twice. Both times making it as written but I did double the sauce so I could freeze half which worked great.

Blender Hollandaise Sauce
