Easy Indian Butter Chicken

This dish is amazing! I use less butter and I substitute a can of coconut milk for the cream but it tastes just like the butter chicken at an Indian Restaurant!

Tres Leches (Milk Cake)

This is my mom's favorite cake, its better the next day. I recommend making the cake a couple days ahead of time to let it sit in the fridge and soak up the delicious milk. Also I only put a tablespoon or two of sugar in the whipped cream.

Avocado, Tomato and Mango Salsa

This salsa is the best. I was cooking for 20 people last night, so I tripled it and served it over mahi-mahi. I like to use more mango than tomato, i love all the different colors in this salsa, a definite keeper!
