White Bean Chicken Chili
This is absolutely delicious! I was looking for a way to use the fresh tomatillos growing in my garden and came across this recipe. Another site called for a pound of fresh tomatillo in place of an 11 oz of canned. I doubled the recipe and used 1 1/2 pounds of diced fresh tomatillos in place of the canned. I sautéed diced fresh chicken breast with the onions and garlic. Afterwards, I added the broth, spices, tomatoes and tomatillos just as instructed. I haven't made much with tomatillos and heard that they break down quickly, but mine were still firm- not mushy at all. Since my son will not touch green veggies in soup, I decided to fish out most of them and give them a whirl in my blender. When I added the resulting smooth mixture back to the soup, the blended tomatillos acted as a thickener. So... no cornstarch necessary! I used 2 cans of beans and fresh oregano growing wild in my yard. The soup turned out AMAZING and THICK!!!

Key Lime Martini
Yum! This drink is decadent! I upped the measurements to 2 oz each. It filled my martini glass up to the rim :) I didn't have any vanilla flavored vodka so I added a splash of vanilla extract to Sky vodka instead. It worked just fine. I didn't have any trouble with the cream separating but I also keep my martini glass and shaker in the freezer until I need it. I'm not sure if that makes a difference. My drink also turned out white in color as opposed to the clear martini pictured in the recipe. Anyhow, I would recommend this drink to anyone who enjoys key lime pie. It tastes just like it!

Cream Cheese Cookies I
Very tasty cookie with the full 8 oz of cream cheese used instead of 3. I also added a tsp of baking soda to the mix to make them puff up a bit and opted for 1 tsp of vanilla instead of 1/2. I'm a ridiculous vanilla fan. I always double to amount. They're probably perfectly fine without the extra, too. I added semi and milk chocolate chips to the dough while mixing and dropped by large tsp. They turned out great. Both my son and husband loved them in their lunches :)
