Dairy free version: I used full fat cashew cream and coconut milk instead of milk. I did add potato slices on the bottom and three eggs to the bechamel sauce. It reheated in the microwave very well.

Fluffy Pancakes

Easy to Remember Pie Crust

I have never made a pie crust before. The first batch came out terribly, but I think it was the flour I used. It was an organic pastry flour. I tried again and the next batch (made with AP flour) came out fine. I used a little more than 1/4 cup water. I then made one more batch for the top crust and it came out just fine. I baked the remaining scraps; they were flaky but bland, not at all greasy as someone said. As part of my blueberry pie, the crust was okay, but bland. The recipe was easy and worked. I only give it 4 stars because it lacked flavor... the rest of the pie had plenty of that to go around, though.

Shiitake Angel Hair Pasta

Gourmet Sweet Potato Classic

This was nothing special. Mashed sweet potatoes with pecan sugar topping. It would have been less work and fewer calories (and the same or better taste) to have eaten the sweet potatoes whole with butter and sugar.

Buttery Rolls

I don't have a bread machine, but I saw that "tat2whttrsh aka Lambchop's mom" explained what she did. I followed Lambchop's mom's directions and these rolls were very good. They were quick and light. I recommend baking them as soon as they are ready to go into the oven. Don't let them sit on the counter because they will start spreading and then they will be too dense.

Quick Quiche

I used 5 eggs, about 12 slices of bacon, added sauteed mushrooms, substituted green onions for the regular onions and cheddar for swiss. I left out the butter because there was so much extra bacon. I baked it in a round casserole dish. It tasted good, but different from regular quiche. I would describe it as less egg tasting even though I used an extra egg. Microwaves just fine the next morning or for a midnight snack!

Indian Tomato Chicken

I swear, this is the only Indian food I can cook and not end up with a yucky tasting mess. It is so good. Let it cook for a couple of hours to get the meat tender. I love it with boneless chicken breasts and always serve it with Indian Spiced Rice that was posted by Jen.

Grandma's Lemon Meringue Pie

So easy! I always thought that lemon meringue pie would be complicated but this was a snap. Took less than 30 minutes from start to finish. The only thing I wish the recipe mentioned was how much lemon juice. My lemons were sort of stingy- only about 1/3 c. out of two lemons. I made sure to get about a tablespoon of zest in the custard. Yum!

Bill's Blue Cheese Dressing
