Pesto Pasta with Chicken

Good stuff! Two notes: - Chop the tomatoes if they are whole! Those mothers are thick and DO NOT soften once added to the mix. - Pesto is x-pensive. A small jar of the stuff WILL be enough to complete the recipe, BUT costs 5 or 6 bucks at least!

Strawberry Cheesecake Quesadillas

I loved the premise of this at first (a fruity skillet treat!), but it simply doesn't work. Floury tortillas just don't taste good with cream cheese, and the strawberry jelly doesn't "stick" like cheese wuold when you make a regular quesadilla. Instead, it just oozes out, burns in the skillet, smells up the kitchen, and leaves you with a sticky mess.

Chicken Alfredo with Fettuccini Noodles

Not your average Alfredo sauce, mine tasted heavy on the ricotta, even after using a 1/4 cup more parmesan. This isn't necessarily bad, just different. The only downside is ricotta congeals if you let it cool, so it can be a bit difficult to move from container to container if you put it in the fridge. Also, ricotta is not to everyone's taste, so it may be better to go with only ONE container, and maybe sub the rest with a cup of milk. Thank you! :)

Mouth-Watering Stuffed Mushrooms

After trying the original recipe and taking a look at some of the other reviews on here, I would DEFINITELY go with 2/3 or 1/2 the amount of cream cheese, OR smaller mushrooms. The cream cheese can just be overwhelming in (lack of) taste and texture if you go with the original. I would also at least double the amount of parmesan, and pop some worchestershire in with the garlic and spice mix to get those two flavors going. This is a great recipe if you have a balance of flavors, but as I mentioned before, the cream cheese is just overwhelming (not to mention a little hard to clean up after if you melt or whip it)!

Honey-Glazed Pork Chops

Definitely double the glaze! I only had 3 chops and the ingredients called for just barely covered those. The chops, though seasoned before and after baking, still came out a little too dry. Next time I'll top with cheese and maybe throw in some buttered egg noodles and mixed veggies to round out the meal, then use the glaze as a sauce.

Chicken and Broccoli Alfredo

YUM! One of my first real experiences cooking in the kitchen and one of my favorite recipes. The chicken prep definitely takes more time than the 20 mins., but maybe that's just me. Perfect for work lunches and leftover dinners!

Sausage and Bow-Tie Pasta Florentine

Good and spicy. This was something I think I could use some cheese with, and I first cooked it w/o spinach, so definitely next time. Some way to reduce the number of dishes I have to wash would be nice, but this is a great recipe to take for work lunches.
