My favorite things to cook
Spare ribs, pork butt, brisket, tri tip, salmon, ABT's, Oinkwurst, it just goes on and on........... I make killer cole slaw. And BBQ beans. And about anything else from sloppy joes to great pepper steak to a gourmet stuffed pork loin pinwheel to...........
My favorite family cooking traditions
We cook 30 gallons of REAL apple butter, the very BEST there is, in a copper kettle over an open fire each October. Two days of family & friends, a lot of work, good times and good eats. If they help stir they get apple butter.
My cooking triumphs
Helped good friends, the Smokin' Scotsmen BBQ Team, take 8th overall out of 124 teams in the 2009 American Royal Invitational BBQ Contest (the World Series of BBQ). It was their first Royal cook.

Asparagus Wrapped in Crisp Prosciutto
This is good! Then I tried this - Make it killer by spreading softened cream cheese on the prosciutto before wrapping the asparagus, it tears easy, be careful. Don't bake it, grill it. You'll be glad you did.

Marinated Barbequed Vegetables
This was good. I don't do eggplant so it wasn't included. I added some sweet Vidalia onion. And this is fast grilled, not barbecued. Barbecue is done low and slow on my smoker.
