I followed the recipe, omitting the green pepper b/c I only had red, and used navy beans instead of cannellini. Sorry, but this was way too vinegary for our tastes. I took it to a camping pot-luck and had quite a bit left over. I felt the cilantro and cumin were wasted since the vinegar overpowered everything else. If I try it again, I'll tweak to use less, or a different kind of vinegar, increase the cumin, cut back on the salt a bit, and maybe add some minced jalepeno instead of hot sauce to give it some depth of flavor instead of just the heat. As is, it was just OK for us.
