Good Old Fashioned Pancakes

Reviewed: Oct. 4, 2009
Easy and delicious! My husband whipped these up for Sunday morning breakfast but rather than turn them into traditional pancakes, baked them as mini-muffins. SO GREAT. Still light and fluffy and our daughter couldn't stop eating them! We also added a little vanilla and used part cream/part milk. Thanks for the recipe!

Salsa Chicken Rice Casserole

Reviewed: Sep. 14, 2009
This was great. I followed a few suggestions from reviewers. The addition of black beans was terrific. I would use less onion next time but I would still add raw onion to the dish (rather than browning it) so the finished product tastes very fresh with that crisp onion flavor. I also browned diced chicken in olive oil with garlic, rather than boiling. I included crushed tortilla chips over top when serving and that really added a punch. Very filling and overall a hit!

Chicken Breasts in Caper Cream Sauce

Reviewed: Sep. 13, 2009
My husband asked if I added this to my recipe box to make sure we would have this again. He went back for seconds even though he said he was full ;) So easy and so yummy! I skipped the dill, doubled the sauce amount, and served over rice with a side of asparagus. Next time I will also skip adding salt as a seasoning. The chicken was well seasoned enough with the lemon herb and garlic powder and got lots of extra salt from the caper sauce. Thanks!

We made this just as the recipe suggests with one exception, we added a package of stew seasoning, and it was great. Super easy and yummy.

One Dish Chicken Bake

Reviewed: Sep. 10, 2009
My husband loved this and it was so easy. I added broccoli so it was really a complete one dish and didn't have to add any extra veggies on the side. I only gave it 4 stars because it was pretty salty even using low sodium stuffing and soup. We still enjoyed it! Thanks for the recipe!

Banana Crumb Muffins

Reviewed: Sep. 10, 2009
I made these several times for the holidays last year and they were a huge hit; but, made them again this year and they just didn't have the same zing. Regardless, people love them and they are a fun treat. Thanks for the recipe!

Brown Sugar Meatloaf

Reviewed: Sep. 10, 2009
I am no cook and this was easy, delicious and received RAVE reviews from our dinner guests. My husband and high doubts I could pull this off and all he kept saying through dinner was how good it was, really really good. I did use most of the suggestions to alter the recipe a little. I put the sauce on top only, not in the bottom of the pan, I used bread in the bottom to soak up the grease, used a quarter onion diced and onion soup mix, and adopted a few other ideas too. We paired with corn on the cob and mashed potatoes. It was a treat and I would make it again!

Easy Bacon and Cheese Quiche

Reviewed: Aug. 31, 2009
This was a huge hit. I'm not much of a cook but I've been trying to improve my skills. I wanted to try something easy but that would make my husband happy on a lazy Sunday morning. He LOVED this. I took the other reviewers advice and used shredded mixed parm cheese for the creaminess. I also used bacon pieces but won't do that again. It was a little fatty/ chewy and I think the bacon bits would do the trick for our tastes. I will make this again! Super easy and delicious!
