Laura's Unbelievable Chicken and Pasta

Reviewed: Jan. 3, 2012
This was a really good recipe. I of course had to make a couple changes, due to what I had on hand. I used fresh/chopped spinach instead of frozen. And I didn't have any cherry tomatoes, so I just drained a can of diced tomatoes and threw them in. (which I think may have made it better) My family ate this up. And my usually picky husband gave it a '10'! He said it had a sauce that reminded him of a bisque. Mmmmm yummo!

Creamed Peas and New Potatoes

very yummy! I added a little plain yogurt with the milk to thicken it up. Needed quite a bit of salt, but was still good.

Brooke's Best Bombshell Brownies

Reviewed: Mar. 27, 2011
Yummo!! The only thing I changed was to use only 2 1/2 cups of sugar instead of 3. They were perfect. I think 3 cups would have been too sweet. They had a perfect texture and I will save this recipe for sure!

Refried Beans Without the Refry

Reviewed: Feb. 27, 2011
These were awesome. All I did different was add some diced red pepper with the onion. I strained them and didn't have to use any of the extra liquid. Thanks for the healthy recipe!

Slow-Cooker Chicken Tortilla Soup

Reviewed: Jan. 23, 2011
good, not great. WAY too salty if you add the extra salt it calls for. The recipe has enough salt with the enchilada sauce and chicken broth. Next time will use less liquid too.

Rolled Flank Steak

Reviewed: Jan. 12, 2011
WAY. TOO. SALTY. If I made this again, I'd use less soy sauce, and less steak seasoning. The bacon and cheese add even more saltiness to it. Also, I'd cook the bacon first. Mine was practically raw!

Cranberry Cheesecake

Reviewed: Nov. 11, 2010
This cheesecake was spectacular! I followed the recipe exactly, except I had to substitute lemon for lime juice. After mine was done, and had been refrigerating overnight, I melted some white chocolate and butter in a double boiler and drizzled it over the top. It set nicely and was a perfect offset of the tart cranberries. Thanks for a great recipe!! =)

Lemon Raspberry White Chocolate Mousse Cake

Reviewed: Sep. 24, 2010
This was a decent recipe. Just to stress.... the recipe calls for the white choc mixture to be "luke warm".. no no... let it cool!!!!! I made the mistake of adding the whipped cream while it was too warm and it didn't fluff properly, just kinda melted it. Everyone still loved it though :)

Zucchini Bread

Reviewed: Apr. 18, 2010
This is a great bread recipe! I opted to make mine a tiny bit healthier. I used all whole wheat flour. Like other reviewers had done, I used applesauce in place of the oil. For sugar, I used 1 cup white sugar, and a 1/4 cup agave nectar. Which made for a perfect sweetness. I also added craisins along with the choc chips, which adds a nice tang with the sweet chocolate. Next time I will try and substitute yogurt for the sour cream. Deeeelicious!! =)

Avocado Dessert

Hmmm this was very different. Kinda yummy and yucky at the same time. On the plus side, my 4 year old loved it.... dipped apple slices in it. Guess it was a good way to sneak avocados in to her;)

Breaded Parmesan Chicken

Reviewed: Feb. 28, 2010
Great EASY recipe. I omitted the curry and added a little garlic salt. I also dipped the chicken in an eggwash prior to coating in the breading. Chicken was very juicy and a big hit! Thanks!

Chocolate Cream Cheese Frosting

Reviewed: Jan. 23, 2010
This was just ok. The texture I ended up with was more greasy than creamy. Too semi-sweety, would use milk chocolate chips instead.

These were pretty good. DO NOT attempt with chocolate chips, the chocolate will be way to thick to coat the crackers!!

The Best Rolled Sugar Cookies

Reviewed: Jan. 1, 2010
If I could give these 10 stars, I would. This is by far the best sugar cookie recipe ever. They turn out perfect every time. I make some with just sprinkles and redhots, and some I wait and frost. Both ways are deeeeeelish!!

Baked Potato Soup I

Reviewed: Nov. 13, 2009
Dear sweet lord this is the by far the best soup I have ever made!! I of course did make a few minor adjustments though. I only used about 1/4 cup of butter. I substituted about 1/2 bacon grease that I had left over. I added pre-steamed baby carrots, broccoli and red onion, plus 4 cloves of miced garlic. This was so delicious. My husband said this is the best soup he's ever had!! Thank you so much for this awesome recipe! =D

Quinoa and Black Beans

Reviewed: Oct. 29, 2009
This is a great dish. I added a little less cumin and a little taco seasoning in it's place. I also added two diced (pre-cooked) chicken breasts. I used one can of reduced sodium chicken broth instead of vegeatable broth to help flavor the quinoa, plus a little diced red pepper. It was excellent with cheese and sour cream on top. I think we're gonna use the leftovers for burritos!! Thanks for this healthy(well a bit less healthy thanks to my changes ;), delicious recipe! =)
