About this Cook
I am 20 and I live in Terre Haute, IN with my husband. We've been married for 2 1/2 years and I cook for him pretty much every night and I love it. When I was younger my family was a bunch of picky eaters so I was never able to share my cooking with them, so I love having someone that will pretty much eat whatever I put in front of them.
My favorite things to cook
I love to make chicken fried rice and chicken lo mein. I recently made fried chicken and it will definitely become a staple. I love baking all kinds of different things. I also recently purchased a bread machine and I love making pretty much anything in it. It makes bread making so much easier.
My favorite family cooking traditions
Homemade mashed potatoes that are mashed with a handheld potato masher. My grandmother always made them that way for holidays and that's the way I make them now. And this is something I haven't personally tried but I hope to shortly: fresh green beans with bacon. My great aunt made these for Christmas dinner and they are absolutely amazing. My grandmother had always put bacon in green beans, but using fresh green beans made it 100 times better.
My cooking triumphs
Making fried chicken that looked and tasted as good as KFC. I had always been afraid of frying chicken because I thought it would be so hard and really it wasn't. Another triumph was the first time I made white cake from scratch, I was so happy because it turned out perfectly.
My cooking tragedies
One time I was making brownies and I was heating the chocolate/butter/sugar mixture and when it came time to add the eggs I didn't realize that you had to add a little bit of the chocolate mixture to the egg first and then mix the eggs in a little bit at a time so I ended up with brownies with scrambled eggs in them. And one time I tried to make eggless brownies. The result was a dry, flavorless mess. From now on I'll just go buy eggs when I want brownies and don't have them. Also, one time I tried to make a pork roast that hadn't thawed all the way in a slow cooker. It cooked for 3 days and still was raw in the middle.

Potato Cake
I've made these for my husband a couple times and he loves them. They're easy to make and very versatile. I can sub whatever seasonings and cheeses I happen to have on hand that I need to use up.

Garlic Cheese Flatbread
This was amazing. I basically followed the recipe to a T. I added a little bit of garlic to the dough and about 1/2-3/4 cup more flour and I also sprinkled some sea salt on top before baking as well as adding pepperoni. I will definitely make it again.

Easy and Delicious Chicken and Rice Casserole
I typically get a little irritated when people rate a recipe high when they've made a lot of changes to it, but honestly, I think that's the beauty of this recipe. It's so versatile. I didn't make a lot of changes, but there were a few. I subbed chicken stock for the water and used healthy choice cream of chicken. I cut the chicken into bite sized pieces, seasoned it with salt and pepper, and I mixed everything up rather than putting the chicken on top. I also added broccoli to it and omitted the onion soup mix(didn't have any). Next time I will up the rice a little bit because it came out mushier than I would like and I will also not salt the chicken, because the soup and stock are already so salty. I'm only giving this recipe 4 stars, because I don't think it would so good as is. I'd also like to point out to the people that are complaining about the pictures that those are user added pictures, the person who posted the recipe did not add them. Some people wanted to add peas, some didn't.
