Absolutely Fabulous Portobello Mushroom Tortellini

My husband and I both loved this recipe! Don't forget to scrape the "gills" out from the underside of the mushroom, that way the sauce won't turn the purple/brown color some people complained about. I added yellow bell pepper, zucchini, broccoli, cherry tomatoes and carrots as well. Then instead of mixing it all together I just spooned the sauce on top of the noodles and topped it with the mushrooms and veggies. Very delicious and beautiful presentation!

Tacos in Pasta Shells

I browned the beef with diced onion and flavored it with a taco seasoning packet to make it easier on myself. Next time I won't toss the shells in butter, I don't think it added anything to the flavor and it was very messy to stuff them once they were coated with the butter. I also put a layer of salsa in the bottom of the pan for extra flavor and to prevent them from drying out. My husband and I both enjoyed this recipe, our young children ate it but they didn't like it as much as we did. ***I did make it a day ahead and refrigerated it for ease of baking at the end of the day. I added about 15 minutes to the cook time (covered with foil) and it turned out great!

Turkey Brine

I simmered chopped onions, carrots and celery along with the all spices on medium-low for a few hours to make the vegetable broth. I was concerned about the bird tasting very salt but I was wrong, our turkey turned out wonderful! The juciest ever! We will definately be doing this to all our turkeys in the future!

Buffalo Chicken Dip

We skipped the cheddar cheese and used Frank's Buffalo Wing Sauce. Very delicious!! Great with breadsticks and cornchips too. We even liked it cold the next day. A definate keeper.

Beef Bourguignon II

My husband loved this one, I was so-so. Added a packet of onion soup mix and made the whole thing in the slow cooker. After I browned the meat I put everything in and cooked it on low for 7-8 hours. I also reduced the cup to 1 cup and used 1 cup beef broth.

Ground Beef Shepherd's Pie

This is a great way to "clean out the fridge". I added all the leftover veges I could find as well as extra fresh veges. I also added a packet of dry onion soup mix. It was delicious! Even my 1 and 4 yr olds loved it!

Delicious Ham and Potato Soup

This is the BEST potatoe soup I've had! A few changes I did... I didn't bother peeling the potatoes, just washed and diced them up. Also added some chopped carrots for color and flavor. Only added about 1/2tsp of pepper and no extra salt, just the boullion. I like my potatoe soup a little bit thicker than it turned out. I'm not sure if I did something wrong with the flour mixture or if it's just a thinner broth. So I mashed the veges real lightly with potatoe masher and added instant mashed potatoe flakes to thicken it up a bit! Wonderful recipe!

Absolutely Ultimate Potato Soup

Fairly easy recipe to make. I thought it was a little too smokey flavored from the bacon grease. I think next time I'll use butter instead of the grease. I also shredded some carrots and added for color.

Super Easy Slow Cooker Chicken

Had to change the recipe slightly as I didn't have all the ingredients on hand. I used cream of chicken soup (w/out herbs), an onion soup mix, fresh mushrooms and white zin. I also used frozen chicken breasts that I cut up since I was in a hurry and cooked over medium-low heat for about 2 hours. My husband loved it!!! Haven't heard him rave like this in quite a while.

Scalloped Potatoes II

Loved these potatoes! Taste just like my mom's. We added some cooked bacon and apple cider vinegar the next day to the leftovers for a quick german potato salad (warmed all in a large fry pan). Turned out great!

Oven Roasted Red Potatoes

My husband loves roasted red skin potatoes and he says these are the best he's ever had! Couldn't have been any easier. Make sure you turn over on pan frequently so they don't brown too much on one side

Sausage Brunch Casserole

Took this for a MOPS meeting recently everyone loved it!! I did change a few things though. I used ham instead of sausage and used a cheddar-jack blend cheese. Mixed the egg mixture night before and stored it in the fridge. The next morning I baked the crescent rolls for about 5 minutes before pouring on egg mixture. Turned out perfect! Thanks for such an easy, delicious recipe!

Easy Chicken Tetrazzini

Real yummy! Everyone loved the creamy flavor. I used 1 can cream of chicken soup & 1 can cream of mushroom soup. I also added 1 cup of milk and only 1 cup water. Next time I think I'll add some chopped green pepper to give it a little zip!

Chicken Enchiladas I

Mixed review with my family. My husband loved it the kids & I didn't. I thought it was too runny even though I omitted the water and added extra cheese. I assembled it about 1 hour before baking and the tortillas got very soggy. Don't think I'll be making it again.
