Chicken Breasts with Balsamic Vinegar and Garlic

Followed the recipe exactly and wasn't impressed. The mushroom sauce was good but chicken was so bland. Served with angel hair pasta and broccoli. Won't be making it again.

Slow Cooker Carnitas

Family loved it! Doubled the rub ingredients exceptI didn't have coriander, so did a bit of cumin. Also only did a small sprinkle of cinnamon. Followed the suggestions and cut the pork into chunks so the rub would penetrate more meat. It was delicious! Be sure and squeeze a bit of lime juice on it before eating!

Great recipe! I follow exactly as written but add 1 tsp of vanilla extract just to add a little sweeter flavor. They freeze really great too!!!

Butternut Squash Cajun Fries

These were okay but I don't think I'll make them again. Nothing special about them or the flavor. I did salt them and place between paper towels to drain excess moisture as well as bake on a cooling rack on top of cookie sheet to help them crisp and that didn't even work

Leftover Casserole

This is a great base to use up whatever leftovers you may have in the fridge and cupboard. I've done it a couple times with various ingredients and it's always come out good. Tonights dinner consists of smoky links, ham lunchmeat, red potatoes, broccoli and cauliflower along with the cheese, soup and milk (omitted noodles). I use whatever cheese we have in the fridge also. A great way to use up those scraps that accumulate! Thanks so much for sharing this idea.
