Banana Crumb Muffins

Very easy and Great tasting. Will be making this often. I did do a loaf vs. muffins and still turned out great! Baked about 10 min. longer.

Roasted Cauliflower Soup

I thought this was fantastic! I will double next time. Not enough for leftovers! The only change I made was to add some red pepper flakes to the cauliflower and used white wine vs. dry sherry. Yummy! And low cal!

Unbelievable Chicken

I thought this was just fair. In the dishes defense, I have never been a person that cares for "sweet" meat, so I should have known better than to try this.

Very Good and easy recipe. Flavors are very nice. I did add a bit of white wine to my onions and butter, a couple of dashes of hot sauce and of worchestershire. Will definately make again.

Marilyn's Cheesy Clam Chowder

I would cut the amount of cheese, and I thought there were too many clams. I would only use 2 cans, and did use 2 cups half and half, and two cups milk. Overall, pretty easy to make and tasty. I would make again with these changes.

Broccoli Cheese Cornbread

I made exactly as directed with the exception of adding a little shredded cheese as recommended by others. I love onion and broccoli but way too crunchy, and probably hated the onion the most. Way too much. I think overall the taste was good, so I may try again without the onion and broccoli. Smelled delicious when baking....

Vegetable-Stuffed Portobello Mushrooms

I would have given this a 5, and next time I make this, with modifications, it will be a 5. There was WAY TOO much vinegar. One bite and my husband spit it out. I would use a milder marinade, or just brush with olive oil and a touch of vinegar. You can really substitute any veggies for this. I used diced zucchini, diced the mushroom stems, artichokes and fresh spinach. Great overall idea with many possiblilities, just watch that vinegar!

Light Zucchini Casserole

Hubby and I thought this was great! Can't wait to have leftovers for lunch today. Followed some others advice and squeezed moisture from the zuchinni AND the onion, then added a 1/2 cup of shredded sharp cheddar. Also added some red pepper flakes for a little zip, sea salt and paprika on the top for color. I think people expect this to come out more bread-like b/c of the bisquick, and are therefore disappointed. If you want slight crunch on top and creamy goodness inside, try this!

Baked Zucchini Chips

I love this recipe for a quick, easy and low cal side dish. Second time I made this, I sliced zucchini long ways, vs. circular, and instead of only egg whites, used one whole egg and one egg white. Seemed a bit crispier and I preferred this more.

Alaska Salmon Bake with Pecan Crunch Coating

I thought this was FANTASTIC! So did my hubby. Very moist and flavorful. I seasoned first with course sea salt, pepper and red pepper flakes. Spooned liquid topping over fish then patted crumb topping on. Can't wait for my leftover piece for lunch tomorrow!!!

Lime Chicken Soft Tacos

These were awesome, but I agree with a lot of the other reviewers; substitute cilantro for the oregano. I also added cumin and red pepper to the chicken while it was cooking. Whole lime instead of half, and we got 11 of the smaller tortillas out of the 1 1/2 pound of chicken, so it fed my husband and I 2 meals (with sides). Will definately make again.

Spaghetti Squash I

Awesome! I added more black olives (because I love), garlic salt and a bit of flavored olive oil to the squash after I got it out of the shell becacause it seemed a bit dry. Feta cheese and the basil really made this dish. Having left overs for lunch today!!! Yum!
