Shrimp and Crab Casserole

We really liked this casserole. I made it as written with one minor change. I didn't have any buttery round crackers for the topping, so I substituted plain bread crumbs. It was delicious! This is a keeper. Next time, I might play around with adding some mushrooms and/or black olives; maybe use brown rice instead of white. I'll see what comes to mind. This is a good base recipe to play off of, if you're so inclined.

Couscous-Stuffed Pork Chops

This first time I made this recipe, I had to make one change. I substituted dried cranberries (craisins) for the currants (I don't use them.) It was GREAT! The second time I made it (for my Dad's birthday), I doubled the couscous stuffing. I ended up with enough to almost cover the chops. It worked just fine. The chops were moist and we had plenty of the stuffing to have as a side. This recipe is definately a keeper!

Creamy Saffron Shrimp with Gnocchi and Caramelized Onion

I made this recipe exactly as written and thought it was VERY GOOD! My friend who doesn't even like shrimp ate it and had seconds! I will make this again.

Peanut Butter Feather Pancakes

Although these pancakes turned out very light, they also had a little bit of a bitter taste. I'm thinking it's from too much baking powder. I understand the baking powder is what helps them to be light, but I would rather not taste it. It took a lot of syrup to drown out that bitterness. I like the peanut butter idea; I even added some chocolate chips to some of mine, and they were really good (after the bitter taste). I will make these again with my own batter and I'm sure I will like them all the more. Thanks for the idea!

Jacquie's Birthday Chocolate Macaroon Bundt Cake

I love this cake! I thought the macaroon part was a bit skimpy, though. That's why I only gave it 4 stars. Next time, I will double the macaroon. I made the recipe as directed, but my egg white for the macaroon would not get stiff. So, I tried again, thinking the plastic bowl was the issue. Even in the glass bowl, no success. So, I added the coconut, flour, and vanilla and moved on. It turned out fine. Just not enough of it for our tastes. The chocolate cake itself was AWESOME! So chocolatey and moist (yes, I added 3/4 cup water instead, as suggested). I also ended up with an extra egg yolk, so I threw it in there, too. Didn't seem to hurt it at all. After all, aren't recipes as much a suggestion, as an absolute? Anyway, overall, this cake is a keeper! I will make it again and again. BTW - I used the Easy Chocolate Bundt Cake Glaze from this site for my glaze...FANTASTIC! You really should give a go. So easy and so yummy!

Quick Yeast Rolls

I haven't made home made yeast rolls in many, many years, but decided to make these when I read how quick they were. I'm so glad I did! These were great! Our guests loved them and so did we. I didn't put them in muffin tins, however. I just put them in a rectangular pan and let them squeeze up next to each other. They pulled apart beautifully! I will make these again and again. Thanks for sharing this recipe!

Krista's Sticky Honey Garlic Wings

I love the sauce in this recipe. I made it and put oven-fried breaded chicken pieces (think McNuggets) in it. I served it over veggie fried rice. My DH loved it! This one is a keeper. Thanks for a wonderful addition to our menu!
