Reading a sourdough bread recipe, it says to place the dough in a warm (85 to 90°) place.  It's November here and I don't have any places in my house that are that warm.  Any suggestions?  Thanks. MORE

Chef John's Salt Roasted Chicken
I made this tonight. It was excellent. I didn't have chicken broth, so used a tiny bit of Swanson's Flavor Boost, and a small splash of dry Sherry. The house smells wonderful. As another said, be sure to brush off excess salt, and I let it sit for over 15 minutes. I think if you stick to the basics on this It would be hard to mess up. Also be sure to check after 50 minutes. Mine was more than done, but still juicy.

Lemon Sauce for Salmon Patties
I didn't care for this recipe. The ratio of butter to flour is off. There isn't enough butter to cook the flour. Hence the floury taste. I will try making it with a 1:1 ratio and giving the flour a chance to cook, a basic roux.
