Italian Cookies I

I've been using the recipe for Italian Anisette Cookies from this site and finally got around to trying this recipe. I don't know if it's the butter, or what it is, but the texture and taste of these were amazing. I added anise instead of the vanilla extract and coated them with a mixture of powdered sugar/milk.

KNUDSEN Creamy Layered BLT Dip

I hate to say I did make changes based on other's recommendations but this was fabulous! I used 8 oz. sour cream and 8 oz. cream cheese. I used a full pound of bacon, cooked crisp, then crumbled. I also doubled the onion powder. Delicious!

Tiramisu Layer Cake

I'm not a fan of Kahlua or overly liquor-ey tasting tiramisu - so I cut back on the coffee flavored liquer. I shouldn't have! I was also nervous with the soaked layers (I shouldn't have been), as well as the layer with with the coffee powder in it (again, I shouldn't have been). Next time I will follow it exactly as written. One other thing I did wrong - I didn't cover it when I put it in the fridge. Big mistake! This is definitely a 5 star recipe if you follow all the directions.

Garlic Prime Rib

My first attempt at prime rib and it was easy and excellent! I had an almost 8 lb. roast, used the full recipe for the garlic. I also used the 460/400/325 method.

Horseradish Sauce

Really good sauce. The only thing I did different was using light sour cream instead of nonfat. This tasted better after it had sat for a few hours to blend. Next time I make it, I'll probably serve it after it's been sitting out for 20 minutes or so. It was just a little too cold on the prime rib.

Easy Caramelized Onion Pork Chops

Yummy recipe. The liquid didn't evaporate all the way for me (and I did uncover it), but it didn't take away from the taste at all. I liked the onions in the "sauce". Very flavorful. Chops were slightly dry but overall a tasty and easy recipe for a weeknight.

Cheddar Bacon Hamburgers

Very good burgers. I left out the horseradish because we were out. I thought I wouldn't enjoy the bacon pieces, but you honestly couldn't tell they were there. Even my kids didn't know they were in there - it just had a nice flavor.

Delicious Ham and Potato Soup

I followed the recipe exactly and it was fantastic. Even my kids, who said they wouldn't like "ham soup" loved it. One word of caution, the salt can be a little heavy. I don't mind salty foods, but this was borderline for me. Next time I think I'd reduce the salt by 1/4 tsp. and I think I'll use 1% milk to see how that turns out. I love that this was so quick and easy!

Marinated Pork Loin

Was very pleasantly surprised with this recipe. I didn't marinate it overnight, as I only found the recipe the morning I was making it, but you could definitely taste the flavor throughout the meat. Kids enjoyed it too.

Antipasto Pasta Salad

This recipe was just ok - but to be fair I did make some changes that may have altered the taste. I did not use Asiago, as I didn't have it on hand. I asked for genoa salami at the deli, but they gave me hard and it was just too greasy and I didn't care for the taste (much prefer genoa).

I made these and followed the recipe to a T. except for adding almond extract instead of anise. I also pulled them out of the oven and immediately cut them with a pizza cutter, it worked perfectly. They didn't crumble at all. They were a bit crunchy on the outside and dry-ish in the center - which is just how I like them. They're perfect with a cup of coffee! Got rave reviews from my father-in-law too. I don't think I'll try another recipe, this one tastes good and it's so easy.

Caramelized Onions on the Grill

These were fantastic. I actually forgot to use the garlic salt, I'll try it again the next time, but they were still great. I put them in the oven at 400 and intended on cooking them for 60 minutes, but after 40 our dinner was done. They were very, very tender so we ate them anyway. Delicious!

Buffalo Chicken Rolls

I made this years ago with crumbled blue cheese inside. I don't think you need the extra browning, you wind up drying out the chicken. Tonight I sliced the chicken in half to make 2 thin pieces (no pounding). I laid them flat in the dish and poured the sauce over it. After cooking 30 minutes, I spread some cream cheese on a flour tortilla, added the chicken (cut up small), crumbled blue cheese and diced celery. Really yummy wraps!
