Creamy Frosting

I tried this recipe when I found myself without a can of frosting for a batch of school-party cupcakes. I accidentally made this with HALF the butter because my kids were helping (read: distracting!) me. I didn't realize it til after I was done and you know what? I was perfectly happy with the results! Piped it onto some cupcakes (used clear vanilla extract so as not to affect the color) and it set up nicely. I was afraid it would have a whipped cream texture and be running all over the place by the time I got them to school for the party, but they made it without a problem. I will have to try these with the correct amount of butter to get the full effect, but I have a feeling I will be going back to my lower-fat version!

Virginia Apple Pudding

Tasty and best of all, QUICK and EASY. I made this on the way out the door to dinner at the in-laws and took it fresh out of the oven in an insulated carrier. It's definetly not meant to be spongy and cake-like, but very moist and pudding-like. I had no complaints, although next time I'll try it with less butter for calories' sake. I'll also sprinkle the apples across the entire surface of the batter so that every slice gets its share. Just had the leftovers for breakfast after warming them in the microwave. Delicious the second time around too!

Oatmeal Soda Bread

I made this the same night I made Oatmeal Soda Bread from this site and liked the latter much better. I don't know much about soda bread, but this didn't seem to have a lot of taste.

Banana Split Ice Cream

Yum! I have a small ice cream maker so I cut the recipe in half and still had to make it in two batches. It did NOT go to waste, however! I agree with trying cream or even half & half instead of the milk next time.

Crab Dip

I'm obviouisly in the minority here, but I did not love this recipe. I personally found it to cream-cheesy, even after cutting the cream cheese down to one 8 oz package. I can't understand what I'm missing here. To each their own, I suppose!

Buffalo Chicken Dip

Great appetizer for anyone doing the Atkins diet! I used less ranch and shredded some grilled chicken breasts. I also halved the recipe and baked it at 350 in a pie plate until bubbly. For those of us NOT on Atkins, tortilla chips make excellent "dippers" with this recipe!

Oven Roasted Potatoes

Couldn't be easier! I used 2 pounds of red potatoes and left the skins on. If you need these in a hurry, you can put them in a baking dish and cover with foil. They will cook much faster but the result will be softer, creamier potatoes, instead of crisp, browned ones

French Spring Soup

This was great. I used baby spinach and I think next time I will give it a quick chop so that it is more in proportion to the rest of the soup. I'll also cut the asparagus a little smaller. I would love to know if this would work with evaporated skim milk or something of the sort to cut out that evil cream! If anyone tries it, please post the results!
