Chipotle Crusted Pork Tenderloin

Loved this! Thought the rub was a little too spicy before I put it on the meat, but it was just the right amount of heat after it was grilled. (I did reduce the chili powder to 2 Tbsp, but kept everything else the same). Will be making this again!

Fish Tacos

I only used this recipe for the white sauce so that is what is getting my 5 stars. Yummy! (I used with frozen fish fillets and a coleslaw mixture from a different recipe - toss together 2 cups coleslaw mix, 2 tsp olive oil, 1 Tbsp lime juice, 2 chopped green onions, 1/3 c chopped cilantro and salt & pepper to taste).

SO good!! I recommend shredding the onion. Otherwise, made everything as written. My husband said they were WAY better than restaurant hash browns!

Loved this recipe! We cut our chicken into large chunks as a previous reviewer had mentioned to do. I also cut back on the cayenne pepper a bit simply because of our kids, but it still had great flavor!

Roast Pork with Maple and Mustard Glaze

This was delicious IF you like a sweeter glaze. I definitely recommend putting the Tbsp of Tabasco in the glaze. It helped cut the sweetness a bit. I also made a half batch of the glaze and poured it over a loaf pan full of cut up onions and potatoes and yams. I baked them next to the pork in the oven. I would recommend stirring the vegetables a couple times while baking.

Chili-Lime Chicken Kabobs

Loved this! I doubled the recipe, increased the limes to 3 and used Chipotle Chili Powder instead of regular chili powder and then just a pinch of Cayenne. I made it the night before and then marinated the chicken for five hours. It wasn't spicy and just had a great flavor! I got rave reviews from my friends. Will definitely make again!
