Spinach, Red Lentil, and Bean Curry

Quick and Easy Green Chile Chicken Enchilada Casserole

After reading some of the reviews and before I made it, decided to use some homemade taco seasoning listed on this website as Taco Seasoning I (didn't want to run to the store). Probably could have shredded the chicken some more. Mixed the chicken with the sour cream, but otherwise, followed the recipe AND OMG this is so good, it's like my dream Mexican meal and nobody can leave it alone. We keep going back into the kitchen to take a bit off here and there. It's too funny, we were saying it's some kind of scientific phenomenon that it's just disappearing..haha

Hot and Sour Chinese Eggplant

Didn't have chili oil or a green chili pepper (not for lack of trying to find these things) and had some difficulty balancing out the flavors, so looked up how to make chili oil and found chili peppers (i've had in my spice cabinet and threw one in) cumin and pepper, as well as red chili flakes. Also had a HUGE amount of eggplant and doubled the sauce twice (made it in two batches) We added that mustard you get from the chinese restaurants and it was pretty good. I really shouldn't be rating this recipe since I didn't follow it, so give it 5.

Spinach Enchiladas Verde

Decided to follow some of the other reviews and add mushrooms, onion and green pepper to stuff in the enchiladas. Delicious! Had no problems with the spinach though I stuffed baby spinach in whole. Yummy!

Transformed Spinach Mushroom Quiche

Really great, precooked the mushrooms, onions and then wilted the baby spinach, but otherwise followed the recipe and it was really pretty easy to make. And with me dishing up the servings it lasted quite a bit longer as some of us need to watch our weight. The only problem is my dear hubby doesn't want anything else!!!

Chili Rellenos Casserole

Echoing others, I too think the 1/2 cup milk called for is a mistake. Having used the 1/2 milk in the recipe caused a last minute panic where I added additional flour to thicken the eggs, milk and flour When not added, it's perfect, so therefore it's definately a mistake. Copying some of what bansreeparikh suggested: "8x8 pan, 3 eggs instead of 2, enchilada sauce instead of plain tomato sauce, added some black olives and jalapenos on top, used only 8 ounces lower fat mexican cheese instead of 16 ounces" I made my own enchilada sauce from a recipe I found here, the 10 minute enchilada sauce recipe, much better than store bought.

Gnocchi II

I'm no gnocchi genius for sure, but this recipe as it's written seems to have too much flour per potato mixture. It says to use 1 cup mashed potatoes with 2 cups flour, at least I think that's what it says which tastes too doughy or floury for me. If you add equal parts potato it improves ?? I think ???

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

I've made this several times and love it! The only thing is I don't add the kale, since I'm trying to eat a raw diet and this is kind of transitional with the cooked quinoa (perhaps I'll try a sprouted version), I can't see cooking kale, but it's probably still good that way.
