Brussels Sprouts with Pecans

I made this yesterday for Thanksgiving and we loved it! Made exactly as written, just added a spritz of lemon juice to my portion at end. Will definitely be my go-to recipe for brussels sprouts.

Feta Chicken Salad

Loved this! Delish and very easy to make. I used Greek yogurt instead of the sour cream, and added toasted pecan pieces and fresh basil. It's a keeper.

Wonderful Chicken Curry Salad

Loved this! and so easy to make. I added fresh basil and toasted pecan pieces, and used Greek yougurt instead of sour cream. Great with spinach or lettuce in a pita; tastes very rich but really not too much fat! It's a keeper.

Fresh Salsa

I give it 4 stars as is, but with additional lime and cilantro it's a 5! I used the last of my garden tomatoes that had been ripening in a grocery bag in the basement. Nothing like fresh tomatoes-- the salsa tasted like Summer in November!

Crustless Spinach Quiche

Creamy Zucchini Soup

Summer Squash Casserole with Nuts

We have made this recipe twice so far using pattypan squash from our garden, and we like it a lot. Changed the mayo to sour cream and used more pecans, but other than that we left it as written. The second time we made it we added about a pound of browned chicken breast pieces so the dish had some protein (when we did this we doubled the recipe). The only reason I give it 4 stars instead of 5 is that for us it's a bit bland. We are still experimenting with adding more flavors (spices, hot sauce, etc.) to give it more interest.

Marie's Easy Slow Cooker Pot Roast

Absolutely delicious and incredibly easy. I've already made it 3 times in 2 months; it's cooling in my crockpot as I type. The only change I made was beef broth instead of the water, and added a splash of red wine. Meat is melt in your mouth tender, veggies are perfect after 8 1/2 hrs. on low. Next time I make it I'm going to try adding mushrooms and barley. YUM!

Eggnog Quick Bread

I tried this recipe 3 times because I loved the idea of eggnog bread and wanted to make it for gifts for the holidays. First time, I listened to other reviewers who said it was too dry, and added more wet ingredients as well as the pastry flour. It came out way too moist, like french toast, and did not taste like eggnog at all. Second time, I followed the recipe exactly and it came out, as predicted, very dry and did not taste good. Finallly I tried something in the middle of my two previous versions, and both my partner and I deemed it inedible. I should have known this recipe might be problematic as so many reviewers tried to alter it; usually I stick to recipes that have good reviews with tweaks for personal preference.
