Easy Guacamole

I think this is a great, simple recipe. I have tried many different guacamole recipes, some that are more elaborate than this one, but this recipe consistently gets the highest marks from guests even with its simple, few ingredients. I think the simplicity of the recipe really lets the natural flavor of the avocado come through. Love it!

Oatmeal Raisin Toffee Cookies

This is an excellent cookie! I followed the directions except for I added a 1/2 teaspoon of salt and I used four Skor bars that I crushed. It is true you really cannot taste the toffee but it definitely gives dimension to the cookie that it would not otherwise have. I also plumped the raisins in water before adding to the recipe. A+!

Deep Dish Brownies

AWESOME! I followed the recipe exactly and they turned out great! I was little worried at first because the batter looked and tasted different then what I was used to with my other brownie recipe, but they were wonderful. They were gone literally within a matter of minutes.

Cinnamon Rolls II

I was less than impressed with this cinnamon roll recipe. The dough did not rise up like I was expecting, which very well could have been something I did, but besides that the rolls seemed rather bland.

Spicy Grilled Chicken

I loved the marinade for this chicken! I prefer a less sweet marinade and this was just the ticket. I followed the recipe and then added a half cup of dry white wine. It was superb! I will make this again!

World's Best Peanut Butter Fudge

My husband loves this fudge. So much so, that he asks that I only make it at Christmas or else he would eat it year round. If you or someone you know loves peanut butter, this is like a peanut butter dream!

Amazing Pecan Coffee Cake

Out of all the things I served at a recent brunch, this coffee cake generated the most raves. I had to 'fess up the recipe!! It was the first time I had made it so I was nervous. I followed the recipe exactly but used nonstick aluminum foil to line the pan and it turned out great!

Christmas Breakfast Sausage Casserole

I have used this recipe several times now. It is now expected Christmas morning and I recently served it up for a family brunch at my home. I doubled the recipe and it was gone! The only change I make is that I use two tubes of Jimmy Dean reduced fat pork/turkey sausage. I don't think anyone could tell the difference and I also don't use as much cheese as the recipe calls for. Love it!!!!

Caramel Popcorn

This is an excellent recipe. I love caramel corn from Garrett's in Chicago but it is so expensive, I wanted to try and make it at home. My family agrees this is very close. Follow the recipe exactly, use jelly roll pans, non-stick aluminum to cover the pans (a great tip from previous reviewers), AND a silicon spatula to do all your stirring. It is highly heat-resistant and naturally non-stick. BE SURE TO STIR WELL every 15 minutes as the recipe calls. It is critical. My first batch did not turn out as well as the second because I did not stir thoroughly. Also, do not use too much of the syrup - use just enough to coat thoroughly but not where it is dripping off the popcorn and depending on your oven you may not need to bake the popcorn the whole hour. Baking too long even by just a few minutes will cause it to scorch. Hope these tips help! It is really delicious!

Amy's Garlic Egg Chicken

This recipe was great. I only used about half of the recommended garlic in the egg yolk marinade and I used Italian bread crumbs instead of adding dried parsley to plain bread crumbs and did not use garlic powder in the bread crumbs. My friends loved this! They all asked for the recipe. It was a major hit. The chicken came out tender and juicy and so flavorful.
