Soul Smothered Chicken

Pretty much followed recipe exactly except for using a little Creole seasoning on the chicken instead of salt and pepper, and some extra garlic, and it was great. I did end up thickening the gravy just a little more at the end but that's just personal preference.

Great flavor! I followed others suggestions and went light on adding extra salt. Sauce is a little thin even after letting it sit. Next time might try adding a little extra Parmesan to see if it will thicken up a little more. Definitely a keeper though!

Grill Master Chicken Wings

Cooked them for about 20 minutes using indirect heat and hickory wood to get some extra smokey flavor then finished them off over the hot coals. Excellent with or without the the sauce.

Bubba's Jambalaya

I followed the recipe pretty much exactly the first time I made it and it was very good.......good enough you really don't need to make any changes. I just made it again and this time I used Andouille sausage and smoked the sausage and chicken breast in the grill with some hickory wood. It really added a great touch having the extra smoked flavor!! Oh...I almost forgot....I used medium sized cocktail shrimp this time also....much better then the little salad shrimp.

Peppered Bacon and Tomato Linguine

Just finished eating this for dinner and thought it was very easy to make and excellent. Like others I drained all but a couple TBS of the bacon grease and doubled everything but the pasta. I'll be making this again for sure.
