Best Grilled Pork Chops
We've made this three times on the grill in the last month. The marinade prep is really quick and because there's just the two of us I use the full marinade recipe for 4 chops. Let it rest for about 3 hours in the fridge. Have never grilled boneless pork because it gets so dry, but this was just perfect. So flavorful and juicy. Even the leftover meat was moist the next day. Highly recommend. Make sure you use the low sodium soy sauce and good quality lemon pepper.

Todd's Famous Blueberry Pancakes
Truthfully, many recipes I try on this site can disapoint. This one is an absolute winner. Did the dry ingredients the night before in a big bowl and had my grandson overnight who had begged for pancakes. Added the milk, egg, butter and FRESH blueberries in the a.m. and it came together in a flash. I did let it proof for an hour. The batter is thick, so I put three at a time on my stovetop grill and spread the batter out a little. Kept the ones that were done in a low oven, heated the maple syrup and had fresh butter out to smear. Honestly, these were simply wonderful and I will make them again and again.

Slow Cooker Butter Chicken
My 2 star review had nothing to do with the flavor of this dish - the recipe was perfect. I followed it as written and made the mistake of cooking it in my 6 quart crockpot. The condensation of steam from the underside of the glass cover began to fall back into the dish, and when it was finished it was actually watered down to something like an Indian butter chicken soup! So disappointed, as the wonderful spices lost their intensity. I will make this again, but will prepare it and slow cook it in my cast iron enamel pot for a few hours in a 300 oven, and add the yoghurt when the dish is finished. I'm thinking that way I can control the liquid.
