Banana Spring Rolls

Great spring rolls! I used Banh Trang Spring Roll Skins. I also used cut up bananas sprinkled with sugar, cinnamon, nutmeg and cloves. I have to soften my spring rolls before I roll them out. So I soaked for a few seconds in warm water 'til "foldable", shaked off excess water then filled and rolled. I made 3 to test them out and I'd recommend cooking them on medium heat because if it's too hot they'll brown quickly without cooking the inner skin. Basically, if their not thoroughly cooked they'll still be rubbery/soft on the inside. I also figured that before frying them, roll them into a mixture of sugar and cinnamon then toss 'em into the fryer. I have tons of spring roll paper to use and a lot of bananas. Gonna be a great treat! Thanks for sharing.

Light Oat Bread

Oh my heaven! If I could give this 10 stars I would. I cannot believe how delicious this was. The outside was crusty and the inside was soft and fluffy. I had to cut the recipe down to 6 servings because I could only use 2C flour max for my machine. As a vegan, I substituted the margarine for Earth Balance Buttery Spread (so good) and added 1Tb soy milk. This will be my go-to recipe from now on. Thanks so much! Update: I have baked this 3 times within a week already. That's how good this is. Just noting that it's fabulous toasted too.

Fudge Puddles

These were great! As someone who doesn't use dairy I used an egg replacement (1Tb ground flaxseed & 3Tb water, simmered 3 min, cooled= 1egg). These are definitely going into the recipe box.

Peanut Butter Chocolate Chip Cookies from Heaven

These are great! I changed the quantity to 6 and used an egg and butter substitute because we don't eat dairy. I also used whole wheat pastry flour because we don't use AP flour. I scooped them with a tablespoon and didn't bother to flatten them. It's make 'em much softer this way. The flatter they are the harder/crunchier they can get. I love the amount of peanut butter in it, it's not too overwhelming. I'll make these again. Thanks! UPDATE: I used olive oil instead and rolled them into 2" balls and flattened them just a teeny bit. They were perfect! These are probably my favorite cookies to bake.

Brownie Frosting

Oh my word! This is sooo good. I have never made a frosting this good before. This beats any powdered sugar frosting by far! It's going to be my new go to recipe for cakes, cupcakes and whatever. It's perfect!!

Herbed Potato Soup

Spiced Applesauce Bread

I'm sure this is great as is but adding 1/16tsp cloves makes it so much better. Everyone loves it! Of course, I made it dairy & egg-free (vegan). Use Ener-G egg replacement or ground flaxseed mixed with water til a gel forms.

This is delicious! I omitted the cheese to make it vegan. This will be in my weekly rotation. So healthy, delicious and very easy to make. The best thing about it is you can add other vegetables and it will still taste great. I added crushed tomatoes and fresh spinach. Yummy!

Fluffy Pancakes

Loved these! I'm vegan so I used vegan ingredients. I had a vegan pancake recipe that I always used but these are so much better. Every single one of these rose beautifully. Nice and fluffy just the way I like 'em.

Carrot Burgers

Awesome! I don't use corn flakes for anything I always sub with Panko, they're Japanese bread crumbs. I love garlic so obviously I added garlic. I also substituted those eggs with two Ener-G egg replacers. Worked like a charm ;) One last thing, add 1 teaspoon of dried dill. It turns these from good to great.

Easy Batter Fruit Cobbler

Awesome cobbler! The texture, the flavor, the sweetness, it was all good. I was thrilled to see it didn't require eggs because I don't eat eggs. I used frozen blueberries and whole wheat pastry flour. I will definitely be making this again. Thank you!

Very yummy! I think next time I'll chop the onions much smaller because although they held their shape some fell out. Hehe! I'm thinking these would be delish baked too. Less oil.
