Breaded, Fried, Softly Spiced Tofu

AS IS, this recipe is only a 4 because it requires waaaay more seasonings such as garlic, onion powder, more salt & pepper, etc...but when you add your own touch to this recipe you'll find it's fantastic. If the flour doesn't work for you, substitute with corn starch because it sticks to the tofu much better and it fries better too.

Blueberry Sauce

Delicious! I followed the recipe exactly and it was perfect. If anyone doesn't like this then they're probably too used to the grossly preserved, artificial blueberry sauce. This is healthier and fresh!

Mock Tuna Salad

This was good! I used vegan mayo (Vegenaise) to make it vegan. I was quite surprised how similar in taste this was to tuna. It is very easy and quick to make so this will be on rotation throughout the week when I'm in a hurry. Even my omnivore boyfriend liked it too. Lastly, don't for once think it's going to taste EXACTLY like tuna it's just a subtle version. So don't be surprised when you make this and it doesn't taste just like tuna! It's made from beans!

Herbed Potato Soup

Spinach and Mango Salad

As is, it's good. However, I could have done without the dressing. It just didn't seem to fit. I did get the idea of throwing mango and all kinds of nuts into my salad because of this recipe. Thanks.

Bird Seed Energy Bars

These are ok. They are sweet but lacking in flavor. I would add more cinnamon and vanilla next time. The texture is nice though. It cut beautifully and it's a cake-like bar if that's what anyone is looking for.

Easy Batter Fruit Cobbler

Awesome cobbler! The texture, the flavor, the sweetness, it was all good. I was thrilled to see it didn't require eggs because I don't eat eggs. I used frozen blueberries and whole wheat pastry flour. I will definitely be making this again. Thank you!

Yogurt Parfait

I've made this for years. Except mine is vegan (dairy free). I use homemade granola and also add frozen blueberries or frozen bananas. It's always a go-to for breakfast or when I get a sweet tooth. Love it! Oh almost forgot, add some ground flaxseed, wheat germ or wheat bran for added nutrition.

Banana Spring Rolls

Great spring rolls! I used Banh Trang Spring Roll Skins. I also used cut up bananas sprinkled with sugar, cinnamon, nutmeg and cloves. I have to soften my spring rolls before I roll them out. So I soaked for a few seconds in warm water 'til "foldable", shaked off excess water then filled and rolled. I made 3 to test them out and I'd recommend cooking them on medium heat because if it's too hot they'll brown quickly without cooking the inner skin. Basically, if their not thoroughly cooked they'll still be rubbery/soft on the inside. I also figured that before frying them, roll them into a mixture of sugar and cinnamon then toss 'em into the fryer. I have tons of spring roll paper to use and a lot of bananas. Gonna be a great treat! Thanks for sharing.

Potato Pancakes I

I thought this was a wonderful recipe. It's very easy and it tastes great. I made a few adjustments: added garlic and I also lowered the heat to medium. I burned a few because the heat was so high. Also, try not to turn your back on this recipe because they brown quick.

No Roll Pie Crust II

Very, very good pie crust. There was absolutely no need to pre-bake this crust. I used pumpkin pie to fill the crust and it came out perfect. Delicious, slightly crumbly and flaky. It did not fall apart or crumble when slicing the pie and it held together when lifted out of the pan. Definitely a keeper. Almost forgot to add: I added 3 tablespoons of sugar because I like my dessert crusts to be sweet. Thanks for sharing.

To Die For Blueberry Muffins

This was ok. The flavor of the muffin itself was kind of bland and meh. It was only the blueberries and the topping which gave it a bit of flavor. You definitely need to add something, maybe cinnamon, nutmeg, or something to give the muffin itself some flavor. I won't be making these again.

Veggie Pot Pie

As is, it was good not great. There just seemed to be something missing maybe a certain herb or seasoning but it definitely seemed to lack something. As far as thickening goes, well I believe next time I will use 3 tablespoons of cornstarch or simply boil it longer until it's very, very thick. How it looked going in the pie is how it looked when it came out. A bit on the watery side. Eventually it set a bit but that is when it was cool. I don't personally want to eat a cold pot pie.
