Potato Pancakes I

Reviewed: Aug. 9, 2009
I thought this was a wonderful recipe. It's very easy and it tastes great. I made a few adjustments: added garlic and I also lowered the heat to medium. I burned a few because the heat was so high. Also, try not to turn your back on this recipe because they brown quick.

Southwestern Egg Rolls

Reviewed: Aug. 10, 2009
These were delicious! I'm Vegan so I used the veggies only and Veggie Shreds (vegan cheese). They were pretty good. Next time I'll cut back on the bell pepper and increase the amount of beans, spinach and cheese. I'll also try the meat for my SO because he enjoyed them but mentioned, "where's the meat?" Haha! Thanks for sharing a lovely recipe.

Banana Banana Bread

Reviewed: Aug. 20, 2009
This tastes great! I didn't use as much bananas and sugar as stated but next round I will because it was semi-sweet and it did taste like bananas but it wasn't enough. It didn't have that pop! So, next round I'll just have to stick with the original amount...my fault! Also, I had to switch a few ingredients. So, for my fellow Vegans, I used Vegan margarine (Earth Balance) and an egg replacer (Ener-G Egg Replacer). Also, I used Turbinado sugar in replace of the brown sugar. I'm starting to have bananas on hand now because I'll be making this weekly. Gonna throw in some walnuts next round too. Again, great recipe!

Corn Tortilla Quiche

Reviewed: Aug. 21, 2009
As is, it's very bland so it gets a 3. After jazzing it up with seasoning/spices it's fab!

Banana Crumb Muffins

Reviewed: Sep. 3, 2009
Delicious! I really like these muffins. They're easy, tastey and they make a lot. I managed to get 12 muffins. One thing I did forget was to put the crumbs on top. 10 min into it I added them. I'm pretty sure they would have been crunchier if I didn't forget. Next round I'll add another banana and 1TB less butter. I like my muffins to explode banana in my mouth. Also, they had the perfect texture inside and out. I will be using this recipe often. Thanks for sharing!

Pie Crust IV

I love this crust! I used it today on a veggie pot pie and it was so flaky. I doubled the recipe to make two shells.

Rocky Road

Reviewed: Sep. 20, 2009
This is pretty good! I quartered the recipe because that's A LOT! I think it would be best to use JIF because I only use all natural peanut butter and it doesn't have the same consistency/thickness. It would hold up better if you did. Also, I think it'd be best to cut back on the chocolate because, although I am a chocoholic, it was too sweet. Or I suppose you could just add more peanut butter. Either way! Great recipe! Don't know what the previous poster was talking about but this isn't a cake. It's a "fudge".

Overall, the sauce is fantastic! I couldn't stop bragging about it. I used store brand Apple Cider Vinegar and Kikkoman's Soy Sauce.

Apple Pie by Grandma Ople

Reviewed: Sep. 23, 2009
Fantastic! The original recipe, as is, was really good. It was a simple, basic apple pie that could be even better with added cinnamon and cloves. I baked 2, one just as written and another with added cinnamon and cloves. I chopped my apples up into very small cubes, rather than slices because I don't like my apple pies that way. Overall, great recipe. This will be the only apple pie I baked from now on but I'll be using cinnamon and cloves to jazz it up. Thanks for sharing a lovely and simple recipe.

I made this for my SO and he said to give it a 4. He said it was good but could care less if the peppers were in or not.

Morning Glory Muffins II

Reviewed: Nov. 22, 2009
For overall taste and texture these were good! I must say though if you're using freshly grated carrots, strain first to remove excess water. When measuring the carrots, pack them in. If you've got a food processor you can get this done much faster. Blend first ingredients, pour into bowl, then process other ingredients and add to flour mixture. So much faster and less labor :-) These would be good with a frosting too.

Wheat Crackers

Reviewed: Nov. 23, 2009
I think these are ok. Not much flavor to them but a floury taste. Even the salt doesn't do much. I think they would be better if I added some herbs or spices to it. I made them for my toddler because she loves crackers and I wanted something that was homemade and not full of preservatives, etc...she didn't notice a difference in taste and ate them anyway. The texture is pretty good and they're very easy to make. Thanks for sharing!

These are wonderful! Full of flavor and nutrition! Love the addition of hot sauce. It adds a little something without adding too much heat. I'm actually going to be making these again tonight. Delicious!

Whole Wheat Banana Nut Bread

Reviewed: Dec. 2, 2009
Ok, so here it is. Overall flavor was bland. Needs some cinnamon, nutmeg or cloves. Could use more honey, or better yet throw in a bit of sugar because it wasn't very sweet. I'll probably add some banana extract or more bananas because it wasn't very flavorful either. The texture on the inside was good, not too dry or too moist. It held up well and didn't crumble when cutting. It raised nicely, so the amount of soda it calls for seems about right. This bread has potential and I'll probably give it another try with my added modifications though.

Apple Cider Biscuits

Reviewed: Dec. 3, 2009
I'm so sorry to give this bad reviews but the acv was overpowering, so it tasted like acv and not a biscuit. It didn't cook thoroughly either. I had to cook them for much longer than required. They didn't rise and they didn't brown. When I was making the dough I thought something was wrong because the dough seemed very wet. So I went from there and now I just feel bad that I wasted quality ingredients on these bad biscuits.

Alyson's Broccoli Salad

Reviewed: Dec. 6, 2009
This was delicious! I subbed the white wine vinegar with apple cider vinegar and I omitted the bacon because I don't eat meat. Everything else was such a great combination. Who would've thought broccoli, raisins and sunflower seeds would add texture and taste to a broccoli salad. I bet it tastes even better using the white wine vinegar. I love how fast, easy and tasteful this recipe is. Thanks for posting.

Banana Spring Rolls

Reviewed: Dec. 11, 2009
Great spring rolls! I used Banh Trang Spring Roll Skins. I also used cut up bananas sprinkled with sugar, cinnamon, nutmeg and cloves. I have to soften my spring rolls before I roll them out. So I soaked for a few seconds in warm water 'til "foldable", shaked off excess water then filled and rolled. I made 3 to test them out and I'd recommend cooking them on medium heat because if it's too hot they'll brown quickly without cooking the inner skin. Basically, if their not thoroughly cooked they'll still be rubbery/soft on the inside. I also figured that before frying them, roll them into a mixture of sugar and cinnamon then toss 'em into the fryer. I have tons of spring roll paper to use and a lot of bananas. Gonna be a great treat! Thanks for sharing.

Light Oat Bread

Reviewed: Jan. 7, 2010
Oh my heaven! If I could give this 10 stars I would. I cannot believe how delicious this was. The outside was crusty and the inside was soft and fluffy. I had to cut the recipe down to 6 servings because I could only use 2C flour max for my machine. As a vegan, I substituted the margarine for Earth Balance Buttery Spread (so good) and added 1Tb soy milk. This will be my go-to recipe from now on. Thanks so much! Update: I have baked this 3 times within a week already. That's how good this is. Just noting that it's fabulous toasted too.
