Herbed Potato Soup

Reviewed: Sep. 7, 2010
This is delicious! I love it! You can still get away with adding more salt and garlic. This soup is mild in flavor and very comforting on a cold day.

Very simple, easy and tasty! It's very mild, not overwhelming with either herb or spice. I love it!

Breaded, Fried, Softly Spiced Tofu

Reviewed: Sep. 5, 2010
AS IS, this recipe is only a 4 because it requires waaaay more seasonings such as garlic, onion powder, more salt & pepper, etc...but when you add your own touch to this recipe you'll find it's fantastic. If the flour doesn't work for you, substitute with corn starch because it sticks to the tofu much better and it fries better too.

Baked Kale Chips

Reviewed: Aug. 27, 2010
Wow, these are good but it calls for so much salt! And I'm a salty kind of person. So take that as a hint and maybe half the amount required.

Chocolate Cornstarch Pudding

Reviewed: Aug. 21, 2010
This was average! Lack of chocolate taste and was a very thin consistency. I won't be making this again.

Spinach and Mango Salad

Reviewed: Aug. 7, 2010
As is, it's good. However, I could have done without the dressing. It just didn't seem to fit. I did get the idea of throwing mango and all kinds of nuts into my salad because of this recipe. Thanks.

Brownie Frosting

Oh my word! This is sooo good. I have never made a frosting this good before. This beats any powdered sugar frosting by far! It's going to be my new go to recipe for cakes, cupcakes and whatever. It's perfect!!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Reviewed: Jul. 12, 2010
This was pretty good. I used an egg replacement (Ener-G) because I'm vegan. These came out more brownie-like than cake-like. I have to say this though, use 2 cups of chocolate chips instead. The batter may taste great and chocolatey but once baked the beans taste really comes through. This is a nice alternative to cake or brownies I should say. Thanks for sharing!

Mini Pizza-dillas

Reviewed: Apr. 16, 2010
These were pretty good considering it's a pizza on tortilla. No one should expect it to taste like an authentic pizza either. I was in a hurry and threw this together. We even used Vegan variations with dairy-free cheese. This is a quick, tasty little snack. Thanks for the recipe ;^)

Peanut Butter Chocolate Chip Cookies from Heaven

Reviewed: Mar. 5, 2010
These are great! I changed the quantity to 6 and used an egg and butter substitute because we don't eat dairy. I also used whole wheat pastry flour because we don't use AP flour. I scooped them with a tablespoon and didn't bother to flatten them. It's make 'em much softer this way. The flatter they are the harder/crunchier they can get. I love the amount of peanut butter in it, it's not too overwhelming. I'll make these again. Thanks! UPDATE: I used olive oil instead and rolled them into 2" balls and flattened them just a teeny bit. They were perfect! These are probably my favorite cookies to bake.

Fudge Puddles

Reviewed: Jan. 10, 2010
These were great! As someone who doesn't use dairy I used an egg replacement (1Tb ground flaxseed & 3Tb water, simmered 3 min, cooled= 1egg). These are definitely going into the recipe box.

Great! I was out of elbow macaroni and used spaghetti pasta instead. It was still good. I served them on crackers.

Light Oat Bread

Reviewed: Jan. 7, 2010
Oh my heaven! If I could give this 10 stars I would. I cannot believe how delicious this was. The outside was crusty and the inside was soft and fluffy. I had to cut the recipe down to 6 servings because I could only use 2C flour max for my machine. As a vegan, I substituted the margarine for Earth Balance Buttery Spread (so good) and added 1Tb soy milk. This will be my go-to recipe from now on. Thanks so much! Update: I have baked this 3 times within a week already. That's how good this is. Just noting that it's fabulous toasted too.
