Stuffed Peppers My Way

These are good! I omitted the cheese because I don't eat it and used panko (bread crumbs) instead. I also added corn and zucchini. Yummy!

Carrot Burgers

Awesome! I don't use corn flakes for anything I always sub with Panko, they're Japanese bread crumbs. I love garlic so obviously I added garlic. I also substituted those eggs with two Ener-G egg replacers. Worked like a charm ;) One last thing, add 1 teaspoon of dried dill. It turns these from good to great.

Best Spanish Rice

Wow, this is very good! I'm going to keep white rice on hand just to make this. I normally only eat brown rice and used it that instead but still, it's sooo good! Thanks for the recipe.

Kingman's Vegan Zucchini Bread

This was pretty good. It held together quite nicely considering the egg replacement was with flaxseed and arrowroot instead of ener-g egg. It was very moist and definitely a keeper. This would be sooo good with a cup of coffee. Yum!

Blueberry Sauce

Delicious! I followed the recipe exactly and it was perfect. If anyone doesn't like this then they're probably too used to the grossly preserved, artificial blueberry sauce. This is healthier and fresh!

Oaty Cereal Bars

These are sooooo good! I'm vegan so I omitted the honey and used brown rice syrup instead. This is a very versatile recipe. I baked it as is and several other times with all kind of ingredients like toasted oats, mixed nuts, gluten-free cereals, dried fruit. The possibilities are endless. Thanks for a yummy treat!

Fluffy Pancakes

Loved these! I'm vegan so I used vegan ingredients. I had a vegan pancake recipe that I always used but these are so much better. Every single one of these rose beautifully. Nice and fluffy just the way I like 'em.

This is delicious! I omitted the cheese to make it vegan. This will be in my weekly rotation. So healthy, delicious and very easy to make. The best thing about it is you can add other vegetables and it will still taste great. I added crushed tomatoes and fresh spinach. Yummy!

Mock Tuna Salad

This was good! I used vegan mayo (Vegenaise) to make it vegan. I was quite surprised how similar in taste this was to tuna. It is very easy and quick to make so this will be on rotation throughout the week when I'm in a hurry. Even my omnivore boyfriend liked it too. Lastly, don't for once think it's going to taste EXACTLY like tuna it's just a subtle version. So don't be surprised when you make this and it doesn't taste just like tuna! It's made from beans!

Yogurt Parfait

I've made this for years. Except mine is vegan (dairy free). I use homemade granola and also add frozen blueberries or frozen bananas. It's always a go-to for breakfast or when I get a sweet tooth. Love it! Oh almost forgot, add some ground flaxseed, wheat germ or wheat bran for added nutrition.

Donut Muffins

I really don't know why these are called donut muffins. Donuts are defined as sweetened dough that's fried and shaped as a ring. Anyway, these miniature muffins are good plus they're easy to make and bake in such a short amount of time.

I like the idea of putting oatmeal in here. It gives it a nice taste. I recommend processing your oatmeal until very fine before adding the rest of your ingredients.

Spiced Applesauce Bread

I'm sure this is great as is but adding 1/16tsp cloves makes it so much better. Everyone loves it! Of course, I made it dairy & egg-free (vegan). Use Ener-G egg replacement or ground flaxseed mixed with water til a gel forms.

Beef Barley Vegetable Soup

Thanks for a basic recipe. I omitted the beef roast and the beef broth. Simply used all vegetables and vegetable broth. My boyfriend and I thought it was good, especially with the barley.

Ninety Minute Cinnamon Rolls

My dough did not rise. As others already stated DO NOT add your yeast to the dry ingredients. Proof it first then add it. The flavor was bleh too. I'll keep looking for another CR recipe.

Vegan Chocolate Cake

As is, this is pretty good, not excellent but good. I'd also recommend adding more chocolate, maybe 1/2 cup instead of 1/4. It wasn't as chocolate-y as I'd like it to be.
