About this Cook
I'm 26 and living in Hawaii. I'm in the process of planning a move to Texas (boyfriend is in the Army) and am trying different Tex-Mex recipes to prepare myself for the change ;-) Once I get there I hope to begin grilling and planting my own herbs and tomatoes.
My favorite things to cook
Desserts! Cheesecakes and cookies are my favorite. I also enjoy cooking healthy, Italian, Mexican, vegetarian...and trying new recipes.
My favorite family cooking traditions
I grew up eating A LOT of mac & cheese. I'm talkin about the best kind...the one out of the box! It's now transitioned into my own tradition of adding broccoli to Kraft Deluxe mac & cheese. Next to cheesecake, this has become the number one requested food by my boyfriend.
My cooking triumphs
Triple Layer Chocolate Cheesecake. To die for and it was my first time using a springform pan so many years ago! After making it for my boyfriend's birthday last year one of his coworkers paid me to make one for him and his wife!
My cooking tragedies
The first time I tried to make Cuban black beans and rice the way my bf's mom makes them they turned out so bad I cried! There was also the time I made an Irish cream cheesecake for my work's Thanksgiving pot luck and added extra Irish cream for more flavor...people teased me that they were getting drunk off of it!

Shredded Brussels Sprouts
So worth the time and effort...time and effort being that I "shredded" them by hand, cutting them very thinly with a knife after halving/coring. They tend to be a bit greasy, so be sure to drain some of the bacon fat and use less butter. The pine nuts add SO much flavor. Oh, and the recipe DOES freeze well, assuming they're not overcooked to begin with.

Chicken with Couscous
Very good. Followed directions, save for using ground ginger instead of fresh. Flavor was there but not overpowered by curry or jalapenos; I actually would have preferred it a bit spicier. Next time -- and there will be a next time -- I won't take out as many of the jalapeno veins.

Potato, Bacon, and Corn Chowder
Not bad at all, very hearty, but even with s&p it's missing a little something flavor-wise. The next day it's a little more flavorful (i.e. you can taste the bacon more) but even then, needs something extra. The only changes I made were to add an onion and an extra carrot instead of the celery, and use cornstarch instead of flour. Note: it is a potato chowder, not a corn chowder with potatoes in it.
