Eggplant Parmesan II
I have celiac so I used GF bread to make the crumbs from scratch; I also "sweat" the eggplant as suggested by other reviewers. Additionally, I made my own spag sauce: dice an onion, sautee w evoo, add crushed tomatoes and herbs, simmer/reduce. My boyfriend, who is a Cooks Illustrated junkie and has never made a failed dish, was impressed. Win. :) This was delicious! Thanks!

Pumpkin Turkey Chili
Used some of the modifications of others listed below, but easy and healthy! Here's what I changed: 1) omitted the bell peppers 2) added kidney beans 3) cumin 4) chili powder 5) bay leaves 6) salt, pepper 7) orange juice 8) some tomato sauce I also let mine simmer for two hours. Yum.

Pineapple Fried Quinoa
This is actually pretty good! I overdid my quinoa and didn't chop my pineapple as much as I should... but it was still great. Could be healthier without the yolk. Easy.
