Roasted Lemon Herb Chicken

I wouldn't use vegetable oil in place of the olive oil! I did and the bottom of the pan burned! Oops.

Island-Style Fried Rice

I found this recipe here on Allrecipes a few years ago and made it for the first time. It was to die for. I remembered how great it was the other day and made it again last night.. It really brought me back. An explosion of great taste; the sweet pineapple and salted meat! I have never made mine with the Chinese sausage. I used a 20 oz can of pineapple chunks and cut each chunk into thirds. I cut the luncheon meat into pieces about as big as the cut pineapple pieces. I added about 1 tsp of garlic powder while frying the rice in the oil. I cooked everything together in the end for a minute which cooked the green onion perfectly. This recipe is definitely a keeper for years to come. Restaurant quality!

Ronnetta's Spaghetti Sauce

I have been making this recipes from Ronnetta now for year's. This is a wonderful dish to make and much better than canned spaghetti sauce. As this being a base recipe, I have altered it in some ways. Once I have used half ground beef and half ground Italian Sausage. Usually I will add water, after the sauce simmers for about 8 minutes... 1 can of water from the tomato paste can. Then, let it simmer more and add one more can of water (with the tomato paste can) after 10 minutes. I am starting to make this recipe again for this evening and cannot wait until it is completed!

New Orleans Corn Bisque with Smoked Sausage

It was good for a Cajun style dish. The sausage and corn combo together was nice. I feel there needed to be more flavor for the most part. Maybe added a bit more seasonings. Cheese on top was great especially when melted on top the diced potatoes.

Teriyaki Onion Burgers

These were sensational. The french fried onions were soft but it gave the burger flavor. I don't think it matters if they are crunchy or not!

Juicy Roasted Chicken

The chicken turned out fantastic. Only thing I did different was cut slits in the chicken and stuffed garlic cloves all over. I also rubbed 4 cloves minced garlic all over the chicken. It was easy to de-bone it was so moist. The leftovers (if there is any) is great for next day dishes used with chicken. Get pita bread and sour cream to make sandwiches. MMMM

Oven-Fried Pork Chops

These were sensational. I changed the ingredients by using turkey flavored stuffing mix. The mix consisted of poultry seasoning and that's what made it taste so great!

Rice and Lentil Soup in a Jar

The soup turned out into an excellent texture in the end. It is wise to simmer it for 30 minutes, as the sauce thickens and becomes a soupy texture. It was a bit spicy for my mom (who is usually okay on spices) so I would consider cutting down the pepper to a 1/3 tsp.

Irish Chicken and Dumplings

The recipe was the BEST dumplings over my mother's. Even though I screwed it up a little with the stages, it still worked out great. I cooked the chicken on medium for an hour until it was done - to save some cook time. I will definitely make again.

Banana Muffins II

Added 1 TSP vanilla extract to bring out the banana flavor, 1/4 cup of brown sugar, 1/4 cup chopped nuts and sprinkled the tops with cinnamon. They were very moist and flavorful. The recipe made exactly 12 good size muffins. I used my bananas that were about to expire. Thank you so much for this recipe! It was very easy to make and very fast too.

Mushroom Bacon Burgers

I cooked 5 pieces of bacon and the flavor of bacon was perfect. I used fresh mushrooms and cut them thinly, kind of small. I added white onion, finely finely cut up. I also added a TSP of bacon grease to the meat.

Garlic Green Beans

I rate this recipe as to some-what the same of our famous Green Bean Casserole. It was DE-licious and I could not stop devouring it. YOU HAVE TO MAKE THIS RECIPE WITH CARE and you will get tender, garlicy green bean goodness. Use a whole head a garlic and mince them in the oil, babysitting them for the ten minutes of cooking. That is the key ingredient of great garlicy green beans. Cook until dark golden brown.
