Reviewed: Dec. 26, 2011
I made this using a non-hydrogenated shortening and it turned out great!

Banana Muffins II

Reviewed: Nov. 19, 2009
BEST BANANA MUFFINS - EVER!!! Seriously. These were so easy to make and so incredibly delicious - especially right out of the oven. They melted in my mouth. Here's some changes I made: I used 3/4 cup all-purpose flour and 3/4 cup whole wheat flour. I added 1 tsp vanilla to the wet stuff and 1 tsp cinnamon to the dry stuff. Yummy! Thanks so much for the simple, delicious recipe!

Banana-Chip Oat Muffins

Reviewed: Oct. 28, 2009
Delicious! I modified the recipe slightly. I didn't have any applesauce, so I used 1 tbsp oil and 1/3 c milk (so they wouldn't dry out). I also made 24 mini-muffins and baked them for 14 minutes. Perfect! My preschooler and I both agree, these are yummy muffins.

Yum! Like many reviewers suggested, I substituted beef broth for water, and I added some cumin and garlic. Delicious!

Delicious! I substituted 1/2 banana and 1/8 tsp baking soda for the egg. This recipe could use some vanilla and cinnamon.

Paula's Bread Sticks

Reviewed: Sep. 2, 2009
These were pretty good but I didn't have a bread maker so I had to wing it with letting the dough rise and kneading it on my own. I couldn't get them to brown, either. I did add italian seasoning and garlic, and then some garlic butter on top for the last few minutes of baking. It took a lot longer than 15 minutes to cook, as well. But they were pretty tasty and all of those issues may just be related to the way I made them, so in the end so I give them 4 stars!

Heather's Cilantro, Black Bean, and Corn Salsa

Reviewed: Aug. 9, 2009
Everyone loves this salsa! Here are my modifications: I use no salt added canned corn, beans, and tomatoes, so I really do control the sodium content. I also used low-fat mayonnaise to lower the fat.

Potato Salad III

Reviewed: Aug. 9, 2009
This was my first time making potato salad and this recipe was a hit! The hardest part was knowing when to take the potatoes out of the water. I just had to wing it and my intuition was correct. Some people in my family wanted to add more pepper, one person wanted more mustard, and the rest of us liked it just as it was. So, it's perfect for everyone because you can make it your own. Also, instead of green bell peppers I used red for color.

To Die For Blueberry Muffins

Reviewed: Aug. 6, 2009
So delicious!! These are devoured in my house within a few hours. I actually skip the streusel topping to make them a little healthier and actually easier to make. They are still wonderful.

Spicy Indian Chicken Curry Yummy

Reviewed: Aug. 6, 2009
This was my first time making curry and it turned out to be delicious! The one thing I will change for next time is to lower the heat by significantly reducing the red pepper flakes. My husband and I both love spicy food but this one was a bit too much for us!! Would probably be good with some coconut milk or cream, too. Delicious & easy!
