Whipped Cream

Works great! I put my bowl and mixer in the freezer overnight. I beat it by hand and it was ready in 5 min! I put at least 2 TBSP of sugar because it was definitely not sweet enough.

Garlic Yeast Bread

I used 4 small garlic cloves and I am glad I did because the garlic flavor in the bread is perfect! Used olive oil instead of butter but I brushed the top of the loaf with butter. I also added about 1/2 cup of shredded cheese & some dried oregano. Baked at 375 for 27 min. It is so amazing I decided to never buy white bread again!

Mexican Whole Wheat Flour Tortillas

After trying this recipe several times, I finally got the perfect tortillas by making these changes: I used a pancake griddle to cook them. That way it was evenly cooked with no brown spots. I used all Olive oil, that I mixed with the hot water before adding to the flour (Much easier than rubbing the shortening in the flour and then adding the water!) Add a few more tablespoons of water than the recipe calls for and it will be easier to roll out. (But don't add too much otherwise it will become very sticky) Also the tortillas tasted better when I cooked the tortillas immediately after preparing the dough (no need to let the dough sits for hours - it drys out!)

Pastry Cream

I am french and this pastry cream reminds me VERY MUCH of the cream filled pastries in France! In France this cream is commonly found on mini pies ( 1serving size pies) topped with fresh fruits (strawberries, blueberry, rasberries...) that french people buy fresh at the bakery. I made this recipe with 3 whole eggs.

Vanilla Spice Bread

I made this bread by hand. I omitted the white sugar and added 3 T honey. I used all milk, light brown sugar and all purpose flour. To knead the dough I had to add an additional 1/2 cup of flour because it was too sticky. Make sure you grease the bread pan very well before putting it in the oven! Husband LOVED it :) Also make sure you get some because it won't last long!

Butterscotch Brownies I

These are wonderful!!! They DO taste like butterscotch! I did make a few changes for the better: I substituted the ground walnuts for 1/4cup chopped walnuts to retain the moisture. I reduced the baking powder to 3/4 t. I also paid close attention to the cooking time. I cooked them for 24 minutes (I am at high elevation). They may look a bit undercooked at first but they will harden as they cool down. Also to test the level of sweetness I made two batches, the first with 1 cup of sugar and the other one with 1/2 cup. My husband and I thought that with 1cup of sugar the brownies taste wonderful, like a butterscotch candy. With 1/2 cup it is fluffier and lighter but a bit bland. Next time I will try 3/4 cup of sugar and I think it will be perfect. I really had to control myself not to eat the whole batch!!!!!

Pumpkin Chip Cookies

Great recipe! As others suggested, I added more cinnamon and a bit of nutmeg and they turned out perfect! The pumpkin is not overwhelming which is good. UPDATE: I did 2 more batches today, with WHITE chocolate chips it is even better!!!
