To Die For Blueberry Muffins

Reviewed: Apr. 17, 2013
I made this without the topping since I don't like it on muffins, and they came out pretty tasty. I cut back the sugar to 1/2 cup, added mashed bananas, mixed some orange zest and juice with the blueberries, then sprinkled the tops with sugar before baking. Will definitely make again with different variations.

Reviewed: Oct. 31, 2010
This was really tasty! The only change I made was adding some sauteed onions, celery and carrots. Will definitely make again. Delish!

Campbell's Kitchen Chicken Broccoli Divan

Reviewed: Oct. 9, 2010
This was delish! I only gave 4 stars since I changed the recipe a bit. Instead of boiling the chicken, I sauteed it in olive oil with onions and garlic. Also blanched and seasoned the broccoli (hubby doesn't like crunchy veggies). I put the chicken and broccoli in the pan first, put in some leftover white rice, and seasoned with pepper and a touch of salt. I thought 1 can of soup would be too dry, so i used 2 and upped the milk to 2/3 cup. I put on the cheese, then topped with panko bread crumbs (enough to cover the pan) and drizzled with butter. It was a huge success! The panko made the top super crunchy and delicious. Next time I will add a bit more cheese on top and mix the filling together, since the soup didn't reach the bottom in some spots. Definitely making this again!

Slow Cooker Chicken and Dumplings

Reviewed: Oct. 9, 2010
This was good! I used chicken tenders instead of breasts since the store was out, and just threw them in the crock pot frozen. I used chicken stock instead of water and added some seasonings to add more flavor. I took the advise of some reviews and cooked the dumplings longer, (about an hour and a half), then threw in 2 cans of mixed veggies the last ten minutes. Will definately make this again, and just up the seasonings a bit more.

Yummy Cube Steaks

Reviewed: Oct. 9, 2010
This was good, but has room for improvement. I pretty much made the recipe as is, but sauteed the onions with some garlic to up the flavor a bit. I also added a bit more seasoning. It's a good base recipe, so I will make it again with a few more changes.

Easy Sugar Cookies

Reviewed: Feb. 10, 2010
Normally I don't like sugar cookies, but I made these for a neighbor, and they are delicious!! The only alteration i made was upping the vanilla to 1 1/2 tsp. These have definitely changed my opinion of sugar cookies.

Grandma's Chicken Chardon

Reviewed: Dec. 8, 2009
Oh man this was good! I doubled the egg, butter/lemon mixture, and used italian herb breadcrumbs. It only took 35 min for the chicken to cook, so you need to watch it. I added mozzerella on a few of the chicken breasts in the last 5 min of cooking so we could have a mix of both. Next time I will double the mushrooms and triple the butter mix, as we wanted more of both. Will definately make again!

Sour Cream Pork Chops

This was super yummy! The only thing i changed was using 2 cups of stock instead of the water and bouillon. Took only 6 hrs in the slow cooker to become tender. Will definately make again.

Spinach Tomato Tortellini

Reviewed: Nov. 27, 2009
This was sooo good! I only made some small changes. Since some reviews said it could use more spinach, i used one full bunch, and took out the basil since i can't stand the stuff. I used a can of roasted tomatoes and garlic, 1/2 cup of parmesan cheese and sauteed some onions with the spinach and garlic before adding the canned tomatoes. Delish! Will definately make again.

Chicken Wellington Casserole

Reviewed: Oct. 28, 2009
This was very rich, but good. I added a splash of chicken stock to the filling to thin it out a bit, and wrapped in the croissants to make individual portions. I will try this again since the filling on it's own wasn't as rich, so i will try over noodles or wrapped in something not as buttery as a croissant.

This was yummy! I used 2 cans of drained peaches and sprinkled some cinnamon on them. Instead of using all white sugar, i did as a review suggested and used 1/4c brown sugar and 1/2c white sugar and a splash of vanilla. Will definately make again.

Incredibly Cheesy Turkey Meatloaf

Reviewed: Oct. 5, 2009
This is a good base recipe. I added some diced onions, worcestershire sauce and garlic powder to the mix. Instead of topping with ketchup, i used barbeque sauce. It was really good, but still needs a little something. Will definately use again.

Polvorones de Canele (Cinnamon Cookies)

Reviewed: Oct. 5, 2009
These are sooo good! They just melt in your mouth. I added a little extra cinnamon to the dough, and had to use another 1/2c flour to get the dough firm enough to roll. Also used 3T powdered sugar and 1tsp cinnamon for the topping, and still had a little bit left over. Will definately make these again.
