Loved this recipe. Probably the best salmon I've had. I did skip on the salt, and it didnt need any added afterward. I didn't have parsley, so I just doubled the mint

Weekday Pot Roast and Vegetables

I agree that the time is way too long. I made a 2-pound roast and it was well-done in 5 hours on low. I doubled the veggies. I didn't bother with the gravy; just added some chicken broth before cooking and made my own. The 4-star rating is because I agree with a couple other reviewers that it could use a little more seasoning. I'll probably search around at other recipes for ideas of what else to put in.

Broccoli Fish Bake

I actually changed a lot in this recipe. I only had two heads of broccoli on hand, so I added a large carrot and two small bell peppers to the broccoli. I had noticed other reviews saying there was not much taste to it, so I added half an onion and garlic powder to the veggies as well. I didn't have any cream of broccoli, so I substituted cream of mushroom soup. I almost never have bread in the house, so I substituted rolled oats for the breadcrumbs. The only thing I added was a little black pepper before serving.

Butternut Squash & Apple Soup

I missed the part about pureeing, but I thought it was great without. I didn't have five spice, but used pumpkin pie spice instead. I didn't have Granny Smith, so I used Fuji apples instead. It didn't need the extra brown sugar. I loved the taste of the chicken broth/apple juice mixture. Will definitely make again.

Slow Cooker Chicken Pot Pie Stew

Like several other reviewers, I used chicken broth instead of cream of chicken soup. I also did not use bouillon, but added in some basil and a bay leaf. I used garlic powder and celery flakes instead of garlic salt. I had sweet potatoes on hand, so I used that instead of russet potatoes. We loved it. Only problem was that there wasn't enough! I didn't add any frozen veggies, so I'm guessing that is the reason for less. What I got was probably only about 6 servings worth.

Will definitely make again. I substituted carrots for the celery. I agree with a couple other reviewers about cutting hack on the ginger. Other than that, I thought it was great.

Soft Zucchini Spice Cookies

I have made these cookies twice now. I replaced the butter with Greek yogurt, used whole wheat flour, and doubled the spices. I added another 1/2 cup of zucchini and 2 shredded carrots. The cookies came out great. A little less sweet than I expected, but still great.

Carrot Bread I

This was good. I left out the coconut and cherries because I didn't have them. I had doubled the cinnamon, and we loved it. My only complaint was that it was a bit dry. Not sure quite why. I think next time I will add a little extra applesauce to it. If that doesn't work I will try adding another egg.

Baked Kale Chips

These are great. I have tried them both with curly kale and with the Russian red kale. My boyfriend likes the curly better for the crunch; I kind of like the red Russian better because there is more flavor. They are also good with a little paprika or cayenne pepper. The one problem I have is that regardless of which one I make, I can't get them to stay crisp by the next day. At first I thought it was because I had put them in the fridge, but they still went soft when they were at room temperature

Ham and Beans and More

Mostly used the recipe as stated, except that I left out the bacon and used three cloves fresh garlic in place of the garlic powder. I added a little basil and red cayenne pepper. I only used the 4 cups chicken broth (no water), and the thickness seemed great

Hidden Veggie Meatloaf

This was great. I doubled the veggies and used 2 pounds extra lean ground beef. I also doubled the oats and used an extra egg. It was enough to make 2 large loaves. It could have used a little more ketchup. It did fall apart a little, so I think next time I'll use another egg.

Loquat Chicken

Way too much ginger. I had to add another 2 cups of orange juice and thin it with cornstarch, and it was still too gingery. I will make it again, but I will be cutting the ginger to 1 teaspoon ginger and the cinnamon to 1/2 teaspoon.

Quick Quiche

This was great. I made a couple changes. I didn't bother with the crust. I used fresh spinach and freshly baked ham. I didn't have any red peppers or tobasco sauce, so I used some salsa and paprika. It came out great. Two people finished the entire quiche in two days!

Spicy Slow Cooker Black Bean Soup

I have made this several times, although I have gradually changed more and more. First, it has far too much chicken broth for my taste. 2-4 cups is plenty. I did not like it with only the jalapenos, but it is great with a can of tomatoes with jalapenos. I also add in an onion and extra garlic powder. With these changes it has become a staple in my house. I usually make it once every couple months.

Spiced Slow Cooker Applesauce

I've made this a couple times. I liked it better the first time I made it, when I didn't have pumpkin pie spice or nutmeg and looked up what was in apple pie spice. That time I used cloves and cinnamon. I made it by the recipe this time, and I didn't like it as well until I added a little cloves in as well. It is still pretty good based on the recipe, though.

Easy Granola Bars

This recipe is great. I didn't have dried cranberries or chocolate chips on hand, so I made it with dried blueberries. I made it a second time with dried blueberries and dried cherries. The first time I put it in the fridge instead of bagging them, so it got kind of stale after a couple days, but when the granola bars are bagged they last for at least a week. It's great for breakfast with milk or just as a snack to take with you when your in a rush.
